1. mix cream cheese and salsa together, puton the bottom of a casserole dish and put in frig for a few hours
- 2 8 oz cream cheese, softened
- 24 oz medium salsa
- package of mexican cheese

California Casserole

1.In a large skillet combine beef, garlic, salt, pepper, sugar, tomato sauce & tomato paste
- 1 lb. lean ground beef
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp pepper
- 1 clove garlic, minced (or garlic powder)
- 3 - 8 oz. cans tomato sauce
- 6 oz can tomato paste
- 4 oz light cream cheese, softened
- 1 c. light sour cream
- 2.5 oz can sliced olives, drained
- 3/4 c. green onions, chopped
- 1 pkg 80z wide noodles
- 1 c. shredded cheddar cheese
Chicken Parmesan

Heat oven to 400 degrees. Place cutlets between two pieces of parchment or plastic wrap
- 2 pounds boneless, skinless chicken, turkey or pork cutlets (or use chicken thighs for even more flavor)
- 1/2 cup all-purpose flour
- 3 large eggs
- 2 to 3 cups panko bread crumbs, as needed
- Kosher salt, as needed
- Black pepper, as needed
- Olive oil, for frying
- 5 cups Simple Tomato Sauce (see recipe)
- 1 cup finely grated Parmesan, preferably Parmigiano-Reggiano
- 1/2 pound fresh mozzarella, torn into bite-sized pieces

1. saute onions in butter till soft and add garlic
- 3 T butter
- 1 1/2 cups chopped green onions
- 2 cloves minced garlic
- 1 T cornstarch
- 1/2 cup milk
- 8 oz cream cheese softened
- 10 oz chopped spinach, thawed and well drained
- 1 cup sour cream
- 1 cup cottage cheese
- 1/2 cup jack cheese grated

Roasted Asparagus with Pine Nuts

- 2 tablespoons pine nuts
- 1 1/2 pounds asparagus
- 1 large shallot, thinly sliced
- 2 teaspoons extra-virgin olive oil

- 1 store-bought piecrust, fitted into a 9-inch pie plate
- 6 ounces semisweet chocolate, chopped, plus more shaved for topping

Chocolate Silk Pie

Make the crust: Preheat the oven to 350 degrees
- For the crust
- 1 1/2 cups ground chocolate wafers (from about 30 cookies)
- 1/3 cup sugar
- 7 tablespoons unsalted butter, melted
- For the filling
- 3/4 cup unsalted butter, at room temperature
- 1 1/4 cups sugar
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 teaspoon brandy (optional)
- 4 ounces unsweetened chocolate, melted
- 3 eggs
