- 2 bags baby spinach
- 6 oz craisins
- 1 cup goat cheese
- 1 c toasted almonds
- dressing
- 1/4 cup orange juice
- 2 T red wine vinegar
- 1 T dijon mustard
- 1 T olive oil
- sugar to taste
- pepper
Garlic Herb Palmiers

Position racks in the upper and lower thirds of the oven; preheat to 375 degrees
- 1/4 cup extra-virgin olive oil
- 4 to 6 cloves garlic, minced
- 1 tablespoon finely chopped fresh rosemary
- 1 tablespoon fresh thyme leaves
- 1 teaspoon finely chopped fresh sage
- 1/2 teaspoon Spanish smoked paprika (pimenton)
- 3/4 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
- Flour, for dusting
- 14 ounces frozen all-butter puff pastry, defrosted, preferably Dufour brand (see headnote)
- 3 tablespoons freshly grated Parmigiano-Reggiano cheese
- 3 tablespoons finely grated Comté cheese or Gruyère cheese
- 1 large egg, lightly beaten
Red Lentil Soup

In a large pot, heat 3 tablespoons oil over high heat until hot and shimmering
- 3 tablespoons olive oil, more for drizzling
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- ¼ teaspoon kosher salt, more to taste
- ¼ teaspoon ground black pepper
- Pinch of ground chile powder or cayenne, more to taste
- 1 quart chicken or vegetable broth
- 2 cups water
- 1 cup red lentils
- 1 large carrot, peeled and diced
- Juice of 1/2 lemon, more to taste
- 3 tablespoons chopped fresh cilantro

- 3/4 cup heavy cream
- 8 ounces fine-quality bittersweet chocolate (not unsweetened), chopped
- 1/2 cup sour cream

- 1 (10-ounce) package frozen chopped spinach, thawed
- 3 medium-size yellow squash, thinly sliced
- 1 large red bell pepper, cut into 1/2-inch pieces
- 1 yellow onion, thinly sliced
- 2 tablespoons peanut oil
- 3 cups shredded cooked chicken or turkey
- 12 (6-inch) corn tortillas, cut into 1-inch pieces
- 1 (10 3/4-ounce) can cream of celery soup, undiluted*
