Black Bean-Hominy Chili

1.Microwave broth and tomatoes in a microwave-safe container on high power until steamy hot, about 5 minutes
- 1 quart good quality vegetable broth (e.g. Pacific, Kitchen Basics or Imagine brand)
- 1 can (14.5 ounces) petite-diced tomatoes
- 1 generous Tb. vegetable oil
- 1 medium-large onion, cut into medium dice
- 1 bell pepper, color choice is yours, cut into medium dice
- 3 Tbs. chili powder
- 1 tsp. each ground cumin and oregano
- 2 cans (15.5 ounces each) drained black beans
- 2 cans (15.5 ounces each) drained hominy
- 3 large garlic cloves, minced
- 1 ounce bittersweet chocolate
- 1/4 cup chopped fresh cilantro
Stuffed Cabbage

1.simmer ingredients for sauce for 20 minutes, then add raisins in and cabbage rolls
- sauce:
- onion chopped
- 1 large, 1 medium can tomatoes, chopped
- 1 large, 1 medium can tomato sauce
- 3/4 cup sugar
- juice of 3 lemons
- lots of raisins
- cabbage rolls:
- 1 3/4 lb beef
- 2 eggs
- onion, chopped
- 1/2 cup raw white rice

- 1/2 pound (2 sticks) unsalted butter, at room temperature

Heat oil and garlic together over low heat
- 1 tablespoon vegetable oil
- 1 garlic clove, peeled and smashed
- 6 ounces bacon or pancetta, preferably thick-cut, sliced into strips
- 1 medium onion, chopped
- 8 ounces mushrooms, such as button or cremini, thickly sliced
- 1/4 cup all-purpose flour
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and ground black pepper
- 1 pound boneless chicken thighs, cut into bite-size pieces
- 2 tablespoons butter
- 2 1/2 cups rich chicken stock
- 1/4 cup Marsala, Madeira or sherry
- 1 tablespoon sherry vinegar
- 2 tablespoons finely chopped parsley, more for garnish
- 1 9-inch pie crust, chilled, or 1 sheet puff pastry

- 1/4 cup warm water
- 1 tablespoon freshly squeezed lime juice
- 2 bunches broccolini (1 pound total)
- 4 to 6 thin-cut boneless, skinless chicken breasts or cutlets (1 to 1 1/2 pounds total)
Lasagna With Spinach and Wild Mushrooms

Heat a large frying pan over high heat and add the wet spinach
- 1 pound spinach, stemmed and washed in 2 changes water if using bunch spinach, rinsed if using bagged baby spinach
- Salt
- 2 tablespoons extra virgin olive oil, plus additional for oiling baking dish
- 1/2 pound wild mushrooms, such as oyster mushrooms or maitakes, torn or cut into smaller slices if large or in clumps
- 2 garlic cloves, minced
- 1 teaspoon fresh thyme leaves
- 8 ounces ricotta cheese
- 1 egg
- 1 tablespoon water
- Pinch of nutmeg
- Salt and freshly ground pepper
- 2 1/3 to 2 1/2 cups marinara sauce (more to taste)
- 7 to 8 ounces no-boil lasagna (depends on the size and shape of your dish)
- 4 ounces (1 cup) freshly grated Parmesan

- 14 ounces (400 grams) loaf French bread, (or Italian), sliced in half horizontally (lengthwise)
- 1/2 cup unsalted butter, softened
- 6 cloves garlic, finely chopped (or 1 1/2 tablespoons minced garlic)
- 2 tablespoons fresh parsley, finely chopped
- 1/4 teaspoon salt, (or to taste)
