Chicken Pot Pie Ragu

In a large skillet, melt 1 Tbsp butter over medium heat
- 3 Tbsp butter
- 1/4 c panko
- 2 small carrots, quartered lengthwise and sliced
- 2 leeks, white and light-green parts only, thinly sliced
- 2 cloves garlic, finely chopped
- 1 tsp flour
- 1 c heavy cream
- 3/4 c chicken stock
- 1 lb boneless, skinless chicken thighs, cut into 1/2-inch cubes
- 1/2 c frozen peas
- 1-1/2 tsp chopped fresh tarragon
- 12 oz extra wide egg noodles
- I doubled this recipe, but there were too many noodles. Maybe a bag and a half would have been fine.
Ham & Bean Stew

In a pot, simmer all ingredients except beans over medium-high heat 10 minutes
- 6 c chicken broth
- 1 lb ham steak, cubed
- 1 onion, chopped
- 2 carrots, peeled and diced
- 3 ribs celery, diced
- 6 thyme sprigs
- 2 cans (15 oz each) white beans, drained and rinsed
Carrot Cake

Mix flour, soda, cinnamon, sugar and salt in a large bowl
- Cake:
- 3 cups flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 2 c sugar
- 1 tsp salt
- 1 c oil
- 1 c crushed pineapple
- 1/2 c pecans
- 2 c grated carrots
- 3 eggs
- 1-1/2 tsp vanilla
- Icing:
- 8 oz cream cheese, softened
- 1 box powdered sugar
- 1 stick butter
- 2 tsp vanilla
Taco Spaghetti

Preheat oven to 350 degrees
- 8 ounces spaghetti
- 1-1/4 pounds lean ground beef or ground turkey
- 1 (1-oz) package taco seasoning
- 2/3 cup water
- 1 can (10.75-oz) cream of chicken soup
- 1 can (10-oz) can R-otel diced tomatoes with green chilies, undrained
- 1 (8-oz) package Velveeta cheese, cubed
- 1-1/2 cups shredded cheddar cheese
- He also added onions, garlic and Italian seasoning
Dad's Greek Salad

Place tomatoes, cucumbers and onion in a large bowl
- 4 large tomatoes, seeded and coarsely chopped
- 2-1/2 c thinly sliced Persian cucumbers (about 6)
- 1 small red onion, halved and thinly sliced
- 1/4 c olive oil
- 3 Tbsp red wine vinegar
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/4 tsp dried oregano, optional
- 3/4 c pitted Greek olives
- 3/4 c (3 oz) crumbled feta cheese
Day Before Slaw

Layer slice cabbage, carrots, onion, etc
- Dressing:
- 1 large sweet onion, chopped
- 1 head cabbage - sliced
- carrots, sliced or shredded
- celery, chopped
- pepper
- 1/2 c sugar
- 3/4 c white vinegar
- 1/2 c salad oil
- 1 Tbsp salt
- 1 Tbsp sugar
- 1/2 tsp dry mustard
Italian Sausage Sandwiches

- 3 lbs Italian sausage (links)
- 2 pkg dry spaghetti sauce mix
- 2 green peppers, chopped
- 1 large onion, chopped
- 2 cans stewed tomatoes
- 2 large cans tomato sauce
- 1 can tomato paste
- 2 c water

- 12 asparagus spears
- 4 large (14x18 inch) sheets of phlyllo dough, thawed
- 12 thin slices of prosciutto
- 12 thin slices of Cabot Tomato Basil Cheddar
- 4 tablespoons salted butter
Caramel Snickerdoodle Bars
