Chicken and Wild Rice Salad

In a large bowl, combine chicken, rice, celery, olives, onion, dill, and eggs
- 2 c chopped cooked chicken
- 1 c cooked chicken-flavored rice
- 1/2 c minced celery
- 1/2 c chopped black olives
- 1/2 c chopped green olives
- 1/4 c minced green onion
- 2 Tbsp minced fresh dill
- 2 hard boiled eggs, chopped
- 3 Tbsp mayonnaise
- Leaf lettuce for serving
Fruit Pizza

- 5 c peeled and chopped potatoes, about 3 large
- 2 (14.5 oz) cans stewed tomatoes
- 4 cloves garlic, minced
- 1 large onion, chopped
- 1 tsp salt
- 1 tsp pepper
- Garnish: Chopped fresh parsley

1. Beat first 5 ingredients at medium speed with an electric mixer until well combined
- 4 ounces cream cheese, softened
- 1 (4-oz.) container crumbled goat cheese
- 1/2 teaspoon Worcestershire sauce

- 1/4 teaspoon black pepper
- 1/2 cup toasted, chopped pecans

Clam Chowder

- 1 stick butter
- 1 c celery
- 1 c onions
- 1 clove garlic
- 2 heaping Tbsp flour
- 2 small cans minced clams, including juice
- 1 c fish stock
- 1 c water
- 3/4 tsp granulated chicken broth
- 3 diced potatoes - raw, unpeeled
- 20 oz half & half
- salt and pepper to taste
