Preheat the oven to 375 degrees
- 3 tablespoons extra-virgin olive oil (EVOO)
- 3 - 4 cloves garlic, grated or finely chopped
- 1 red onion, finely chopped
- Salt and pepper
- 3 tablespoons tomato paste
- 1 tablespoon smoked paprika
- 1 1/2 cups chicken broth
- 1/4 cup brown sugar
- 3 tablespoons hot pepper sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon grated orange peel, plus 1 tablespoon orange juice
- 2 1/2 pounds skinless, boneless chicken breasts and thighs, coarsely chopped
- 3/4 cup bourbon
- 4 scallions, thinly sliced
- 1 cup shredded cheddar cheese
- 2 8 1/2 ounce boxes corn muffin mix, such as Jiffy, batter mixed according to package directions
Mom's Lasagna (American Lasagna)

Brown beef and garlic. Add tomatoes, tomato paste and seasonings
- 1 lb ground beef
- 2 cloves garlic, minced
- 1 can tomato paste
- 1 lb 4 oz can tomatoes
- 1 tsp salt
- 3/4 tsp pepper
- 1/2 tsp oregano
- 8 oz lasagna noodles, cooked according to package directions
- 8 oz Swiss cheese
- 12 oz cottage cheese
Dressed-up Tomato Soup
