Chili-Cheese Dogs in Beach Blankets

Preheat the oven to 400 degrees
- 1 tablespoon vegetable oil
- 3/4 pound ground beef or turkey, or finely chopped tempeh
- 1 tablespoon chili powder (eyeball it)
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- Salt and pepper
- 2 tablespoons tomato paste
- 14 ounces refrigerated pizza dough
- 1 1/2 cups shredded cheddar cheese
- 8 hot dogs
Cheesy Meatloaf

Mix all ingredients. Bake at 350 for 1-1/2 hours
- 3 lbs ground beef
- 2 eggs
- 2 cans cream of celery soup
- Italian bread crumbs
- Muenster, Cheddar or Colby cheese, cut into cubes

Crispy Chicken Mexicali Salad

HEAT oven to 400°F. MEASURE 1/3 cup coating mix; coat chicken with coating mix and bake as directed on package
- 1/3 cup SHAKE 'N BAKE Chicken Coating Mix
- 4 small boneless skinless chicken breast halves (1 lb.)
- 1 pkg. (10 oz.) torn mixed salad greens
- 1 can (7 oz.) corn, drained
- 1 cup canned black beans, rinsed
- 1/2 cup KRAFT 2% Milk Shredded Cheddar Cheese
- 1/2 cup KRAFT Light Ranch Dressing
- 4 whole wheat dinner rolls
Stuffed Meatloaf

Mix the first five ingredients together in a bowl and mold into a loaf, set aside 1/4 cup of breadcrumbs
- 2 lbs ground beef
- 2 eggs
- 1 medium onion, chopped
- 2 c Italian bread crumbs
- 2 cloves of garlic, chopped
- salt and pepper to taste
- 16 oz ricotta cheese
- a couple of pinches of dried basil
- 1 (16 oz) can diced tomatoes
Lemon Garlic Chicken

1. Remove skin and excess fat from chicken, rinse and pat dry
- 2 lbs chicken breast halves
- 1 tsp dried oregano leaves, crushed
- 1/2 tsp seasoned salt
- 1/4 tsp pepper
- 2 Tbsp butter or margarine
- 1/2 c water
- 6 Tbsp lemon juice
- 4 cloves garlic, minced
- 2 tsp chicken bouillon granules
- 2 tsp minced fresh parsley
Candy Corn Quesadillas

In a Dutch oven, combine the first five ingredients; heat through, stirring occasionally
- 1 rotisserie chicken, cut up
- 1 jar (16 oz) salsa
- 1 c frozen corn, thawed
- 1/4 c barbecue sauce
- 1/2 tsp ground cumin
- 1/2 c butter, melted
- 8 flour tortillas (10 inch)
- 1 jar (15-1/2 oz) salsa con queso dip, warmed
- 4 c (16 oz) shredded Mexican cheese blend
- 2-2/3 c crushed nacho-flavored tortilla chips
- 1/2 c sour cream
Beef and Bean Taco Casserole

Preheat the oven to 350º
- 1 Tbsp vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 lbs ground beef
- 1 pkg (1-1/4 oz) taco seasoning
- 1 (6 oz) can tomato paste
- 1/2 c water (or 1 tomato paste can full)
- 2 (15 oz each) refried beans
- 3 c shredded colby jack cheese
- 2 c salsa
- 4 c crushed corn chips
- 1 c sliced black olives
- 2 tomatoes, seeded and diced
Cordon Croquettes

In a medium bowl, combine the turkey, celery, shallot, poultry seasoning and paprika
- 1 pound ground turkey breast
- 1 rib celery with leafy top, finely chopped
- 1 large shallot, finely chopped
- 1/2 teaspoon poultry seasoning or ground thyme
- 1/2 teaspoon paprika
- 3 slices white bread, finely ground
- 1/2 cup milk
- 1 large egg
- 1/2 cup grated Parmigiano-Reggiano (2 generous handfuls)
- Flat-leaf parsley, finely chopped (a generous handful)
- Salt and freshly ground pepper
- 4 slices baked ham
- 1/4- 1/3 pound thinly sliced fontina or Swiss cheese
- 1/2 cup dry bread crumbs
- Olive oil, for frying
- Whole-berry cranberry sauce, or chutney

- 1 c butter, softened
- 1 c peanut butter
- 1-1/4 c firmly packed brown sugar
- 3/4 c granulated sugar
- 1 Tbsp vanilla extract
- 2 large eggs
- 2-1/2 c all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 c chopped honey-roasted peanuts
Green Salad with Strawberry Balsamic Vinaigrette

Place jam in a medium bowl and whisk in vinegar then EVOO
- 2 tsp strawberry jam
- 1 Tbsp balsamic vinegar
- 3 Tbsp extra-virgin olive oil
- salt and pepper, to taste
- 1 pint strawberries, sliced
- 4-5 cups chopped romaine or mixed greens of any kind
