Crockpot Ham and White Bean Soup

Place all ingredients in crockpot, and stir the all together
- 1 lb dried Great Northern beans, rinsed and sorted through
- 1 lb ham, diced
- 6 c chicken stock or broth
- 1 medium white onion, diced
- salt and pepper to taste
- parsley to taste
- oregano to taste
Sloppy Maple-BBQ Turkey Joes

In a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat
- 1 Tbsp EVOO
- 1-1/2 lbs ground turkey
- 1 Tbsp poultry seasoning
- Salt and pepper
- 1 small red bell pepper, chopped
- 1 small onion, chopped
- 1 c tomato sauce
- 1/4 c dark amber pure maple syrup
- 3 Tbsp soy sauce
- 2 Tbsp cider vinegar
- 2 Tbsp brown sugar
- 1 rounded Tbsp dijon mustard
- 8 soft burger rolls, split
- Shredded cheddar or pepper-jack cheese, chopped scallions and chopped pickles, for topping
Pan-Fried Chicken-and-Ham Parmesan

1. Preheat oven to 350°. Sprinkle chicken with salt and pepper

- 4 (6-oz.) skinned and boned chicken breasts

South by Southwest Catfish with Guacamole Aioli

- Guacamole Aioli:
- 2 c crushed tortilla chips
- 2 large eggs
- 1 Tbsp water
- 1/4 tsp ground coriander
- 6 catfish fillets
- canola oil
- 10 oz canned diced tomatoes with chilies
- 2 large avocados
- 1/2 c lime juice
- 1 c mayonnaise

- 1/2 cup butter
- 1/4 cup plus 1 tablespoon balsamic vinegar
- 3 1/2 teaspoon salt, divided
- 3/4 cup flour
- 1 teaspoon black pepper
- 6 - 5 oz. fresh trout fillets
- 1/2 cup olive oil

1. Cook green beans in boiling salted water to cover 3-4 minutes or until crisp-tender; drain well
- 2 (16 oz) packages frozen whole green beans, thawed
- (I used fresh)
- 1/4 cup butter
- 3 large shallots, thinly sliced*
- 1 large red bell pepper, cut into thin strips
- 1 tsp kosher salt**
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 small sweet onion, thinly sliced, may be
- substituted.
- 1/2 tsp regular salt may be substituted.
Creamy Chicken Noodle Casserole

Preheat oven to 375º. Spray and 13x9-inch baking dish with cooking spray
- 3 Tbsp unsalted butter, divided
- 2 c frozen vegetable seasoning blend
- 1 red bell pepper, diced
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 c shredded Parmesan cheese, divided
- 3/4 c heavy whipping cream
- 1/4 tsp ground black pepper
- 1 rotisserie chicken, meat shredded and skin and bones discarded
- 1 (16 oz) package wide egg noodles, cooked according to package directions
- 1/3 c Italian-seasoned bread crumbs
- Garnish: chopped green onions

- 3 cloves garlic, minced

- 1 c dry red wine
- 5-1/2 c beef broth, divided
- 1 lb Yukon gold potatoes, cut into 1-inch chunks
- 1 (8 oz) package fresh baby portobello mushrooms, quartered
- 1 c sliced carrots
- 1 c sliced celery
- 6 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 3 bay leaves
- 1 c frozen peas
- 1 c frozen corn
- 1/4 c cold water
- 3-1/2 Tbsp cornstarch
- 1 (14.1 oz) pkg refrigerated pie crusts
Chicken Braised with Vinegar & Garlic

- 2 quartered chickens (about 3 lbs each), skin removed, if you like, from all pieces except wings
