Herbed Rice

Melt butter in a medium saucepan over medium-high heat
- 2 tablespoons butter
- 2 green onions, finely chopped
- 2 1/2 cups water
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 3 cups uncooked quick-cooking brown rice
- 2 tablespoons finely chopped fresh parsley
- 1 teaspoon chopped fresh or 1/4 tsp. dried thyme
- 1 teaspoon chopped fresh or 1/4 tsp. dried sage
- 1/2 teaspoon grated lemon rind (optional)
Veggie Chopped Salad

In a large bowl, combine the first five ingredients
- 3 c finely chopped fresh broccoli
- 3 c finely chopped cauliflower
- 3 c finely chopped celery
- 2 c frozen peas (about 8 oz), thawed
- 6 bacon strips, cooked and crumbled
- 1-1/3 c mayonnaise
- 1/4 c sugar
- 2 Tbsp grated Parmesan cheese
- 1 Tbsp cider vinegar
- 1/4 tsp salt
- 3/4 c salted peanuts
Confetti Chicken Salad

Whisk together mayonnaise and ground red pepper in a large bowl
- 2 c mayonnaise
- 3/4 tsp ground red pepper
- 6 c chopped cooked chicken
- 1 c diced celery
- 1 c diced yellow bell pepper
- 1/2 c diced water chestnuts
- 1/2 c chopped fresh parsley
- 1/3 c diced red onion
- Salt and pepper to taste
Arugula and Orange Salad with Grapefruit-Poppy Seed Dressing

In a medium bowl, whisk together grapefruit juice and next 6 ingredients
- 1/2 c fresh grapefruit juice
- 1/3 c canola oil
- 1 tsp salt
- 1 tsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/2 tsp ground black pepper
- 1-1/2 tsp poppy seeds
- 1 (4 oz) bag fresh baby arugula
- 4 plum tomatoes, seeded and diced
- 2 avocados, halved, pitted, peeled, and sliced
- 1 grapefruit, peeled and sectioned
Piggy Pudding

Preheat oven to 450. Cook sausages in a skillet until done, piercing with a fork to let out fat
- 32 links pork sausage
- 4-5 tart apples, peeled, cored and sliced
- 1 (7-1/2 oz) pkg yellow cornbread mix batter, prepared according to package directions
- 1 c maple syrup for serving
- Fresh sage to garnish
Zesty King Ranch Chicken Casserole

1. Preheat oven to 400°. Melt butter in a large skillet over medium-high heat
- 2 tablespoons butter
- 1/2 (10-oz.) package frozen diced onion, red and green bell peppers, and celery
- 2 (10 3/4-oz.) cans CAMPBELL'S Cream of Chicken Soup
- 2 (10-oz.) cans mild diced tomatoes and green chiles
- 1 teaspoon Mexican-style chili powder*
- 3 cups shredded deli-roasted chicken
- 3 cups freshly grated sharp Cheddar cheese
- 3 cups coarsely crumbled lime-flavored white corn tortilla chips
- Garnishes: fresh cilantro sprigs, lime wedges

- 1-1/2 lbs beef tips
- 2 Tbsp olive oil, divided
- 2 (4-oz) pkgs sliced gourmet blend mushrooms
- 1/2 c diced onion
- 1 tsp minced garlic
- 1/2 c beef broth
- 1/2 c dry white wine
- 3/4 c sour cream
- 2 Tbsp heavy whipping cream
- 1 (12 oz) package medium egg noodles, cooked according to package directions
- Garnish: fresh thyme
- I think it could have used more sauce - maybe double it
