Caramelized Carrot Risotto

In a medium saucepan, bring broth to a boil over medium-high heat; reduce heat, and simmer
- 3 c vegetable broth (I used lots more! Have extra on hand)
- 1/4 c plus 2 Tbsp unsalted butter, divided
- 6 carrots, peeled and thinly sliced
- 1 tsp sugar
- 1 Tbsp olive oil
- 1/2 c chopped onion
- 2 cloves garlic, minced
- 1-1/2 c Arborio rice
- 1/2 c dry white wine
- 1/4 c heavy whipping cream
- 1/4 c shredded Parmesan cheese
- 1 Tbsp minced fresh dill
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2 tsp lemon zest
- Garnish: fresh dill
- (I did not use dill)
Turkey Pot Pie Pasta

In a shallow dish, combine 1⁄4 cup flour, 1⁄2 teaspoon salt, and 1⁄2 teaspoon pepper
- 1 ⁄4 cup plus 2 tablespoons all-purpose flour, divided
- 3 ⁄4 teaspoon salt, divided
- 3 ⁄4 teaspoon ground black pepper, divided
- 1 pound turkey cutlets, cut in half crosswise
- 4 tablespoons butter, divided
- 2 cups chicken broth
- 3 cups frozen mixed vegetables, thawed
- 1 ⁄2 cup reduced-fat sour cream
- 1 (16-ounce) package angel hair pasta, cooked according to package directions and kept warm
- We thought it didn't have enough sauce. Double sauce ingredients next time. (Not meat or veggies, though)
Asian Chicken & Vegetables in Foil Packets

Preheat the oven to 400º
- 4 large scallions, trimmed
- 1 large carrot, peeled
- 4 boneless, skinless chicken breast cutlets (5 oz each), pounded 1/2-inch thick
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 Tbsp reduced sodium soy sauce
- 1 Tbsp (packed) dark brown sugar
- 1 Tbsp rice vinegar
- 1 Tbsp toasted sesame oil
- 1 tsp Sriracha, optional
- 4 tsp sesame seeds
Bravissima Tilapia

Mix first 5 ingredients in a bowl; coat fillets
- 1/3 c fresh basil, minced
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 cloves garlic, minced
- 6 tilapia fillets
Balsamic Rosemary Pork Loin with Roasted Potatoes

Preheat oven to 450 degrees F
- 2 1/2 pound boneless top loin pork roast
- 1 1/2 cups fresh rosemary
- 12 cloves garlic
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon salt
- 2 teaspoons black pepper
- 2 1/2 pounds small red potatoes, cut into 1/2-inch wedges
Ham, Goat Cheese, and Green Tomato Relish Panini

In a medium bowl, stir together green tomato and next 6 ingredients
- 1 medium green tomato, seeded and diced
- 1/2 c diced orange pepper
- 1/2 c diced sweet onion
- 2 Tbsp firmly packed brown sugar
- 2 Tbsp rice vinegar
- 2 Tbsp mayonnaise
- 1/4 tsp crushed red pepper
- 1 (16 oz) loaf ciabatta bread, halved lengthwise
- 1 lb thick-sliced deli ham
- 1 (4 oz) container crumbled goat cheese
Minty Brownies

Preheat the oven to 325º
- Cooking spray
- 1-1/2 c semisweet chocolate chips
- 1 stick unsalted butter
- 3/4 c packed light brown sugar
- 3/4 c granulated sugar
- 4 large eggs
- 1 tsp pure vanilla extract
- 1 c all-purpose
- 1/2 tsp salt
- 1 c mint-flavored chips
- Confectioner's sugar, for dusting
Hot Apple Cider

- 4 mugs worth apple cider
- 1 mug worth carmel flavored vodka
- 1 Tbsp cinnamon
- 1/4 c brown sugar
