A cupcake on steroids, pretty much :)!
- For the Cupcakes:
- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 1/2 cup canola oil
- 1/2 cup applesauce
- 2/3 cup sugar
- 1 egg
- 1/2 cup vanilla soy milk
- 2/3 cup sweet coca powder
- 3/4 cup melted semi-sweet chocolate chips
- For the Razzcherry Filling/Topping:
- 1/2 TBSP corn starch
- 1 1/2 TBSP Raspberry Jam
- 1/2 cup water
- 1/2 cup whole Razzcherries
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- For the Frosting:
- 1/2 cup water
- 1/2 cup dried, tart cherries
- 3 1/2 to 4 cups powdered sugar
- 5 TBSP tofutti cream cheese
- 4 TBSP vegan butter
- 1 1/2 cups organic bunny grahams
