  • For the Cupcakes:
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 cup canola oil
  • 1/2 cup applesauce
  • 2/3 cup sugar
  • 1 egg
  • 1/2 cup vanilla soy milk
  • 2/3 cup sweet coca powder
  • 3/4 cup melted semi-sweet chocolate chips
  • For the Razzcherry Filling/Topping:
  • 1/2 TBSP corn starch
  • 1 1/2 TBSP Raspberry Jam
  • 1/2 cup water
  • 1/2 cup whole Razzcherries
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • For the Frosting:
  • 1/2 cup water
  • 1/2 cup dried, tart cherries
  • 3 1/2 to 4 cups powdered sugar
  • 5 TBSP tofutti cream cheese
  • 4 TBSP vegan butter
  • 1 1/2 cups organic bunny grahams
