Chop corned beef into bite-size pieces
- 3 (2.5 oz.) pkgs. Buddig shaved corned beef
- 8 oz. shredded Swiss cheese
- 8 oz. shredded Cheddar & Monterey Jack (pkg. is 1/2 & 1/2; if available; use 4 oz. of each)
- 16 oz. chopped sauerkraut, drained (try 1 cup at first)
- 1/2 c. Miracle Whip (May take up to 1 cup)
- Chopped Black olives

- 1 c. Mayo
- 1 c. shredded Cheddar cheese (about 4 oz.)
- 2 Tblsp. finely chopped green onions (optional)
- 1 tsp. lemon juice
- 1/4 c. crumbled blue cheese
