Grandma Pizza

Instructions 1. FOR THE DOUGH: Coat rimmed baking sheet with 2 tablespoons oil
- 3 tablespoons olive oil
- 3/4 cup water
- 1 1/2 cups (8 1/4 ounces) bread flour
- 2 1/4 teaspoons instant or rapid-rise yeast
- 1 teaspoon sugar
- 3/4 teaspoon salt
- 1 (28-ounce) can diced tomatoes
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 8 ounces mozzarella cheese, shredded (2 cups)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
Warm and Limey Chicken Salad

Directions In a jar, combine lime juice, sugar, lime zest, rice vinegar, and mustard
- 1/4 cup fresh lime juice plus 2 Tbsp for marinade
- 3 tablespoons white sugar
- 1 teaspoon grated lime zest
- 1/2 teaspoon rice vinegar
- 1/4 teaspoon Dijon mustard
- 1 pound skinless, boneless chicken breast halves - cut into thin strips
- 1/4 tsp black pepper, 1/4 tsp salt
- 1 tablespoon oil
- 1 head red leaf lettuce - rinsed, dried and torn
- 1 (11 ounce) can mandarin oranges, drained
- 1/4 cup golden raisins or cranberries
- 1/4 cup toasted chopped walnuts
Watermelon Margaritas

Preparation 1. Place 2 teaspoons sugar in a saucer
- 1 lime wedge
- 3 1/2 cups cubed seeded watermelon
- 1/2 cup tequila
- 3 Tbsp. lime juice
- 2 Tbsp. sugar
- 1 Tbsp. orange flavored liqueur
- lime wedges or watermelon balls (optional)
Beef & Calabaza Squash Stew

Roasted or baked calabaza squash is very versatile
- 2 Tbsp. coconut oil
- 1 med. yellow onion, chopped
- 1 tsp. dried rosemary, crushed
- 1 tsp. dried thyme
- 1 1/2 pounds beef stew meat, cubed
- 1/2 tsp salt
- 1/2 tsp. freshly ground black pepper
- 4 cups low sodium beef broth
- 1 pound Calabaza squash, peeled and cubed
Bruschetta with Whipped Feta and Roasted Red Peppers

Combine roasted peppers, garlic, vinegar, sugar, pepper flakes, and ¼ teaspoon salt in medium bowl; set aside
- 1 24-ounce jar roasted red peppers, rinsed, patted dry, and cut into 1/2-inch dice (about 1 1/2 cups)
- 1 medium garlic clove, minced or pressed through garlic press (about 1 teaspoon)
- 2 tablespoons red wine vinegar
- 2 tablespoons sugar
- 1/4 teaspoon red pepper flakes
- Table salt
- 8 ounces crumbled feta cheese (2 cups)
- 2 teaspoons juice from 1 lemon
- 2 tablespoons extra-virgin olive oil, plus extra for serving
- Ground black pepper

- 1 pound organic green beans, trimmed
- 1 organic red bell pepper, thinly sliced
- 1 tablespoon extra-virgin olive oil

- 1/4 –1/2 teaspoon crushed red pepper, to taste
