Corn and Chicken Chili

Got this one from the Whole Foods web site
- 1 Tbsp extra virgin olive oil
- 1 large onion, coarsely chopped
- 2 cloves garlic, finely chopped
- 1 1/2 Tbsp chili powder
- 2 tsp oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- Cayenne powder to taste
- 1 lb ground chicken breast
- 1 (15 oz) can tomato sauce
- 1/2 C mild or medium salsa
- 1 (16 oz) bag frozen corn kernels, or 3 cups fresh corn kernels
- Salt to taste
- 1/3 C chopped cilantro

- 9 to 10 medium cloves garlic (about the size of a plump cashew nut), skins left on
- 6 Tbsp unsalted butter, softened
- 2 Tbsp grated Parmesan cheese
- 1/2 tsp table salt
- 1 loaf Italian bread (high-quality); about 1 pound, football-shaped), halved lengthwise

A spectacular holiday alternative to pie that I found on the Seattle Times web site through Apple News
- FOR THE CAKE:
- 1-1/2 C granulated sugar
- 1/2 C vegetable oil
- 2 eggs
- 2 tsp vanilla extract
- 1 15-oz can pumpkin puree (not pie filling)
- 1 C whole-fat Greek yogurt
- 2 C plus 1 Tbsp all-purpose flour, divided
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp kosher salt
- 3 tsp cinnamon, divided
- 1 tsp ground dry ginger
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1/2 C packed brown sugar
- 2 large apples, peeled, cored and diced
- 1 C chopped dried dates
- 2/3 C toasted pumpkin seeds or toasted chopped pecans
- FOR THE GLAZE:
- 1/2 C (1 stick) unsalted butter
- 1-1/2 C packed brown sugar
- 1/2 C heavy cream
- 1/2 tsp kosher salt
- 2 Tbsp instant coffee granules
- 1 Tbsp bourbon (or vanilla extract)

- 6 Tbsp plain dried bread crumbs, preferably whole wheat
- 2 Tbsp ground pecans
- 1 tsp paprika
- 1 tsp celery seeds, crushed
- 1/2 tsp ground cumin
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- Freshly ground pepper, to taste
- 2 (3/4 lb) bone-in chicken breast halves, skinned and cut crosswise in half

- 1/4 tsp red pepper flakes
- 1 lb 9lean ground turkey
- 1 C low-sodium chicken broth
- 1/2 C fresh basil, minced
- Pepper
- FILLING:
- 1 15-oz container fat-free ricotta cheese
- 12 oz reduced-fat mozzarella cheese, shredded (about 3 cups)
- 1/2 C grated parmesan cheese
- 1/2 C fresh basil, minced
- 1 egg
- 1/2 tsp salt
- 1/2 tsp pepper
- 12 no-boil lasagna noodles (about one package)
