  • 1 large onion, coarsely chopped
  • 2 cloves garlic, finely chopped
  • 1 1/2 Tbsp chili powder
  • 2 tsp oregano
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Cayenne powder to taste
  • 1 lb ground chicken breast
  • 1 (15 oz) can tomato sauce
  • 1/2 C mild or medium salsa
  • 1 (16 oz) bag frozen corn kernels, or 3 cups fresh corn kernels
  • Salt to taste
  • 1/3 C chopped cilantro

  • FOR THE CAKE:
  • 1-1/2 C granulated sugar
  • 1/2 C vegetable oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 15-oz can pumpkin puree (not pie filling)
  • 1 C whole-fat Greek yogurt
  • 2 C plus 1 Tbsp all-purpose flour, divided
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 3 tsp cinnamon, divided
  • 1 tsp ground dry ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/2 C packed brown sugar
  • 2 large apples, peeled, cored and diced
  • 1 C chopped dried dates
  • 2/3 C toasted pumpkin seeds or toasted chopped pecans
  • FOR THE GLAZE:
  • 1/2 C (1 stick) unsalted butter
  • 1-1/2 C packed brown sugar
  • 1/2 C heavy cream
  • 1/2 tsp kosher salt
  • 2 Tbsp instant coffee granules
  • 1 Tbsp bourbon (or vanilla extract)
