Dark Chocolate Sorbet

First things first, if you don’t have an an ice cream maker, get one now
- 1 vanilla bean or 1 teaspoon vanilla extract
- 3/4 cup plus 1 Tablespoon sugar
- 3 Tablespoons corn syrup
- 6 ounces dark chocolate (61 to 65 percent cocoa solids), chopped into half inch pieces
- 4 ounces Dutch processed cocoa powder (approximately 1 cup)
Grown Up Orange Julius

This was created to be made in our Margaritaville Bahama drink machine
- 1 1/2 cups orange juice
- 1 cup whipping cream
- 3 shots vodka, preferrably Pinnacle Whipped Cream Vodka
- crushed ice to fill blender
Yayo's Mahi Mahi Fish Tacos

For the fish tacos: Marinate the mahi mahi strips in the beer, 5 to 7 minutes
- Fish Tacos:
- 8 ounces mahi mahi fillets, cut into even strips
- 3/4 cup dark beer
- 1 cup vegetable oil, for frying
- 1 cup all-purpose flour
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon salt
- Coleslaw:
- 6 tablespoons red cabbage, cut into tiny pieces
- 6 tablespoons white cabbage, cut into tiny pieces
- 6 tablespoons carrots, shredded
- 10 tablespoons orange juice
- Salt and freshly ground pepper
- Cilantro Sauce:
- 10 tablespoons sour cream
- 6 tablespoons fresh cilantro
- 2 tablespoons freshly squeezed lemon juice
- 2 small cloves garlic
- Salt and freshly ground pepper
- Four 4-inch corn tortillas, for serving
- Oil, for heating tortillas
Cream Cheese Wontons

Yum. So good! Crispy, light, and a luscious creamy filling with these Cream Cheese Wontons you make at home
- DIPPING SAUCE:
- 8 ounce package cream cheese
- 2 whole green onions, light green and dark green parts, chopped
- 1 tablespoon Sriracha or other hot sauce, more to taste
- 1 whole egg
- 1/2 cup water
- 24 whole wonton wrappers
- Vegetable oil, for frying
- 2 tablespoons low sodium soy sauce
- 3 tablespoons honey
- 1 teaspoon vinegar or rice wine vinegar
- 1/4 teaspoon sesame oil
- 1 tablespoon sriracha, Or other hot sauce
French Quarter Beignets

Mix water, sugar, and yeast in a large bowl and let sit for 10 minutes
- 1 1/2 cups lukewarm water
- 1/2 cup granulated sugar
- 1 envelope active dry yeast
- 2 eggs, slightly beaten
- 1 1/4 teaspoons salt
- 1 cup evaporated milk
- 7 cups bread flour
- 1/4 cup shortening
- Nonstick spray
