Beef Barley Soup / Stew

This is a version that I made up those that have hard tell me it's one of the best they have had
- 1 lb. 90% ground beef
- 1 large onion about 4 to 5 inch accross.
- 3 stalks of celery - Pura
- 4 tablespoons or so of bacon grease
- 8 Oz of barely
- 2 qts be stock
- 1 qt of chicken broth
- 8 med potatoes
- As far as spices go season with salt and pepper and garlic , I used seasoned salt. add spices to taste. Now I added Worcestershire to my bowel as it gives my wife a headache.
Salsa

Cook jalapenos in water for about 30 minutes
- 1 to 3 fresh jalapenos (adjust to desired hotness, I use 1)
- 1/2 cup chopped green onions
- 2 16-oz cans whole or diced tomatoes
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion salt
A Little Bit of Everything Smoothie - Vitamix

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 1/2 cup soy milk
- 1/2 cup red grapes
- 1 orange, peeled, halved
- 2 baby carrots
- 1/2 peach, pitted

- Heaping 1 cup couscous
- 3 teaspoons kosher salt or 1 1/2 teaspoons table salt
- 1/2 teaspoon paprika
- 1 tablespoon grated fresh gingerroot
- 1 cup freshly boiled water
- 1/2 small red onion, finely chopped (about 1/4 cup)
- 1 lemon, halved
- 1 tablespoon garlic flavored oil, plus 1 teaspoon
- 1 pint cherry or grape tomatoes
- 4 salmon fillets
- 1 cup chopped fresh cilantro leaves
Stewed Lentils with Bacon and Herbs

To cook the lentils: In a large saucepan combine all the ingredients
- To cook the lentils:
- 1 1/2 cups green or black lentils
- 1/2 fennel bulb, fronds reserved, for garnish
- 1/2 red onion, peeled, root end left on
- 1/2 carrot, peeled
- 1 stalk celery
- 2 bay leaves
- 1 small bundle thyme
- 2 cloves garlic, smashed
- Salt
- For the lentil garnish:
- Extra-virgin olive oil
- 5 slices bacon, cut into lardons
- 1/2 cup red onion, finely diced
- 1/2 cup celery, finely diced
- 1/2 cup fennel, finely diced
- 1/2 cup carrot, finely diced
- 1 clove garlic, smashed and finely chopped
- 3 tablespoons whole-grain mustard
- 1/2 cup red wine vinegar
- Kosher salt
Mango Pico de Gallo

- 1 c. small cubes of mango (about 1 medium to large mango)
- 1/2-1 large jalapeno pepper (1/2 without seeds is a nice, mild-medium heat; go from there)
- 1/4 c. chopped cilantro
- 1/4 of a medium red onion, finely chopped
- Juice of 1 lime
- 2 cloves garlic, minced
- Kosher or sea salt to taste

- 4 egg
- 8 tablespoons butter (melted)

This soup is beyond delicious, really!! You will be utterly surprised by how good and how easy it is to make
- Toppings:
- 2 cups chopped tomatoes – I use the juicier grape or cherry tomatoes for the best flavor
- 1/2 cup raw cashews
- 2 sun dried tomato slices packed in oil
- 1 1/2 cup water
- 2 cloves garlic
- 1 1/2 tsp sea salt
- fresh chopped chives
- extra virgin olive oil
- black pepper
- For a heartier version – top with small chunks of avocado
Banana Cream Pie

This pie is all about decadence, where the smooth and velvety filling melds beautifully with a flaky pastry crust
- Crust:
- 1 prebaked 9-inch Traditional Pastry Piecrust shell
- Banana Cream Filling:
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/3 cup flour
- 1 1/3 cups whole milk
- 3/4 cup water
- 3 large egg yolks, beaten
- Filling:
- 1 cup thinly sliced bananas
- Garnish:
- 2 cups Whipped Cream
Emeril's Margherita Pizza

Makes one 12- to 14-inch pizza Preheat oven to 500 degrees
- All-purpose flour, for dusting
- 1 portion Basic Pizza Dough
- Cornmeal for dusting, if needed
- 2 tablespoons Pizza Sauce
- 1 tomato, sliced
- 4 to 5 slices buffalo mozzarella
- Salt and freshly ground black pepper
- Olive oil, for drizzling
- Fresh basil, for serving
