  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 1 small bunch scallions, white and green parts, sliced
  • 1 pound small shrimp, peeled and deveined
  • 1 cup thinly sliced white button mushrooms
  • 2 stalks celery, thinly sliced
  • 1 large carrot, shredded
  • 1/4 head Napa cabbage, finely shredded

  • 1 cup of cabbage, shredded

  • 1/2 cup of scallions, white and green parts, sliced 1/8-inch thick

  • 1 tablespoon of fermented black beans, rinsed and minced
  • 1 tablespoon of ginger, minced
  • 1 bunch of scallions, sliced
  • 1 1/2 pounds of shrimp, peeled and deveined

  • 1/4 cup butter, chilled cut into 1/8-inch dice
  • Kosher salt and fresh ground pepper to taste
  • canola oil to cook
  • Vegetarian Shiitake-Leek Dumplings;
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 serrano chiles, stemmed and finely chopped
  • 1/2 cup hoisin sauce
  • 2 cups thinly sliced shiitake mushroom caps
  • 2 large leeks, white parts only, well washed and julienned
