Sweet Potato and Pears

1. Preheat oven to 325. 2
- Ingredients:
- 8 mini pear such a Seckel, or 4 ripe Anjou pears, peeled, halved, cored, quartered
- 3 large sweet potatoes (about 2 lbs), peeled, halved lengthwise, and cut into chunks the same size as the pears
- 6 tablespoons butter or margarine
- 1 cup pure maple syrup (NOT pancake syrup)
- 1/2 teaspoon coarse sea salt or kosher salt

In large pot over medium heat, sauté garlic and onions until soft
- 5 – 7 Sun dried tomatoes soaked in hot water (optional)
- 8 Lasagna Noodles, cooked until soft
- 4 cloves garlic, minced
- 1 large onion chopped
- 6 Tablespoons Extra Virgin Olive Oil
- 6 – 8 oz. sliced mushrooms
- 1 large package fresh firm tofu
- 2 Tablespoons Mirin or Rice Wine
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
- 1 large bunch Kale, chopped finely
- Salt and fresh pepper
- 6 cups Tomato Sauce
- 1 1/2 cups grated soy or mozzarella (I mix real with fake)

Black Bean, Mushroom, and Quinoa Stuffed Peppers

In a saucepan, medium heat, saute the onions in the olive oil for 3 to 5 mins, unti lthe onions are translucent
- 2 TBLS olive oil
- 1 medium onion finely chopped about 1 cup
- 3 cloves garlic minced
- 2 cups finely chopped mushrooms
- 1 TBLS chile powder (I use about a teaspoon or two instead, less heat)
- 1 teaspoon salt
- 1 15-oz can tomato sauce (or a jar of marinara sauce, it gives it more flavor.)
- 1/4 cup water
- 1/2 cup quinoa (rinse first!)
- 4 large red bell peppers
- 1 15-oz black beans, drained & rinsed
- 1 teaspoon maple syrup
- Cilantro for garnish (I haven't done this--I'd use basil instead, more of an Italian flavored dish)
Steve’s Cabbage Soup

Sauté onion in oil until browned
- 1 T. oil
- 1 c. chopped onion
- 1 clove mined garlic
- 1 1/2 lbs cooked turkey sausage, sliced or diced (you can use real sausage, both in deli near hotdogs)
- 8 cups coarsely chopped cabbage, or a small head
- 1 sweet pepper, seeded and chopped
- 1 c. tomato sauce
- 2 qts water or chicken broth
- 1 t salt or paste type soup base. I use Minors chicken base (It’s fantastic)
- pepper to taste
- 3 medium potatoes, cubed
- Three potatoes, boiled, or cauliflower, cooked.

- 1 cup toasted cashews
- 1 cup steamed fresh string beans, cut into 1-inch lengths, or 1 cup thawed
