Red Lentil Patties

1. Place the rice and lentils into a medium saucepan with 4 cups of water, the turmeric, and the salt
- 1 c white basmati rice, rinsed
- 1/2 c red lentils, rinsed
- 1/2 t turmeric
- 3/4 t salt
- 2 T light sesame or peanut oil, plus 4 tsp.
- 1 t cumin seeds
- 2 c diced onions
- 1/4 t red pepper flakes
- 1/4 c arrowroot powder

- Dry:
- 1 3/4 cup whole wheat white flour
- 1 cup vegan sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. freshly grated nutmeg
- 1/2 tsp. ground ginger
- 1/4 tsp. ground allspice
- 1/8 tsp. ground cloves
- Wet:
- 1 cup canned pumpkin puree
- 1/2 cup cartoned coconut milk
- 1/2 cup olive oil
- 2 Tbsp. molasses
- 2 Tbsp. spiced dark rum (optional)
- 1 tsp. vanilla extract
White Bean Cauliflower Soup topped with roasted walnuts and fresh parsley

Saute the onion for a few minutes on medium heat until soft and translucent
- 1 tablespoon unsalted butter or olive oil
- 1 large onion diced/chopped
- 2 - 3 carrots diced
- 1 - celery stalks
- 4 cloves Garlic; minced
- 1/2 to 3/4 head cauliflower; coarsely chopped
- 1/2 cup soy milk
- 2 bay leaves
- 1 teaspoon salt (depending on how salty your stock is)
- 1 - 2 small potatoes; diced
- 2 tablespoons roasted chopped walnuts
- 2 can white beans; rinsed and drained
- 1 tablespoon fresh parsley for garnish
- 4 cups vegetable stock; (good quality) (note: use less so soup is thicker or add more cauliflower and/or potato)
Split Pea & Chickpea Soup

Put everything but the miso/salt into the crockpot and turn on high
- 2 cups dried green split peas
- 1 cup dried chickpeas
- 8 cups water
- 2 teas tarragon
- 1 teas oregano
- 1 teas marjoram
- 1 teas Moroccan spice
- 1 T tomato paste
- 1 T vegetable stock powder
- 2 T miso paste, or salt to taste
- 1 handful unflavored TVP pieces (optional)
- 1 medium potato or sweet potato, diced (optional) *

- Vegetables

- Cauliflower
- Broccoli
- Carrots

- Pumpkin
- Acorn Squash
- Or any combination therein
- Curry Powder
- Black Mustard Seeds
- Garlic
- Ginger
- Extra Firm Tofu – cubed
- Cilantro
- Basil – Fresh (15-20 leaves)
- Soy sauce

- 1 15 oz. can black beans, rinsed and drained
- 1 medium zucchini (about 2 cups), shredded
- 1/2 cup ground flax seed
- 1 tsp. steak seasoning
- 1/2 tsp. dried parsley
- 1/4 tsp. liquid smoke (optional)
Best Black Bean Burgers

Warning: This recipe calls for chilling ingredients for an hour before cooking
- 1/2 cup coarsely chopped onion
- 2 cloves garlic, peeled, chopped
- 1-teaspoon ground cumin
- 1 1/2 cups canned black beans, drained and rinsed
- 1/2 cups dried coarse breadcrumbs
- 1/3 cup fresh cilantro leaves
- 1/2 cups walnuts, finally chopped and toasted
- Salt and pepper
- 1 large egg beaten
Steve's Corn Salad

Combine corn, cherry tomatoes, onions, (jalapeno) zucchini and cilantro
- 6 ears corn (cooked and cut from the cob, or use a package of frozen corn, broil for a few minutes)
- 1 pint cherry tomatoes cut in half
- 1/4 cup Cilantro, finely chopped
- 1/3 to 1/2 sliced red onion
- 1 jalapeno, seeded, and finally diced (I often forget to use this)
- 1 small clove garlic
- 1/2 Zucchini, peeled and sliced
- 2 Limes
- 1/2 teaspoon ground cumin seeds, toasted
- 2 Tablespoons olive oil
- Salt and Pepper to taste

These are amazing! I swapped the brown sugar for coconut palm sugar and used gluten free flour
- Flax Egg:
- 1 1 1 Tbsp. ground flax seed
- 3 3 3 Tbsp. water
- Wet:
- 1/2 1/2 2 cup + 2 Tbsp. unrefined coconut oil, solid
- 2/3 2/3 2/3 cup dark brown sugar, packed
- 1 1 1 tsp. vanilla extract
- Dry:
- 3/4 3/4 3/4 cup whole wheat white flour
- 1/2 1/2 1/2 tsp. baking soda
- 1/2 1/2 1/2 tsp. baking powder
- 1/2 1/2 1/2 tsp. ground cinnamon
- 1/2 1/2 1/2 tsp. kosher salt
- Add-Ins:
- 1 1/2 1 1/2 1/2 cups old-fashioned rolled oats, dry
- 1/2 1/2 1/2 cup vegan chocolate chips
- 1/2 1/2 1/2 cup dried tart cherries, chopped
- 1/4 1/4 1/4 cup walnuts, chopped
- 1/4 1/4 1/4 cup pecans, chopped
- Topping:
- flake salt (or kosher salt)
