Southern Fried Chicken

Heat the oil to 350* in a deep pot
- 3 eggs
- 1 cup hot red pepper sauce
- 2 cups self rising flour
- 2 1/2 pound chicken cut into pieces
- Paula deans house seasoning oil for frying, preferably peanut oil

- 1/4 cup red wine or beef broth
- 3 tbs quick cooking tapioca
- 2 tsp sugar
- 1 tsp browning sauce optional
- 1 1/2 tsp seasoned salt
- 11/2 tsp pepper
- 1/2 tsp dried marjoram
- 2 pounds beef stew meat
- 4 chopped carrots
- 5 small red potatoes quartered
- 2 celery sticks
- 1 medium onions
- 1/2 cup bread crumbs
- 1 cup frozen peas
Jelly Roll

Divide into 3 parts. Roll out length wise and spread with favorite jam
- 2 cups flour
- 1/2 cup sugar
- Pinch of salt
- 1 tsp baking powder
- 1 stick margarine
- Work all the above together with a fork
- 2 eggs
- 1 tbs milk
- 1 tsp vanilla
- Mix eggs, vanilla and milk together well.
- Add together.
Jerk Chicken

Process together: 1 cup lime juice poured over chicken- pour 2/3 mix over chicken- put chicken in dish and pour mix

- 4-5 cloves garlic
- 1 onion
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1 tsp salt
- 1 tsp pepper
- 2 tsp thyme
- 2 tsp allspice
- 2 halijero’s
- 2 tbs veg oil

Mix together and freeze. Then pour sprite over it
- 2 tubs of raspberry crystal light
- 1 can of pineapple juice
Homestyle Cream of Vegetable Soup {Dixie Stampede}

1n a 3 quart sauce pot, melt margarine
- 3 tbs margarine
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp corn syrup
- 3 tbs all purpose flour
- 1/4 tsp white pepper
- 1/2 tsp salt
- 1/2 cup chicken broth
- 1 1/2 cup water fresh parsley chopped
- 3/4 cup vegetables finely chopped [I use diced canned potatoes and canned carrot slices diced very small, veg- all will work]
- 1 pint half and half cream [put heavy cream for a richer taste]

Heat whipping cream and butter until boiling then add semisweet chocolate and vanilla

- 1 tbs butter
- 1/2 cup semi sweet chocolate
- 1/2 tsp vanilla
Spinach Garlic Dip

Cook spinach according to package direction
- 1-10 ounce frozen chopped spinach
- 1/4 cup milk
- 1/2 tsp salt
- 1 tbs olive oil
- 1 1/2-8 ounce cream cheese
- 3 tsp bottled roasted garlic
- 3 dashes of bottled hot pepper sauce
Enchilada Bake

1. Preheat oven 350 2. Boil the pasta and rinse 3
- 1 pd Mezzi Rigatoni
- 2 TBLS olive oil
- 1 lrg red pepper, chopped
- 1 lrg green pepper chopped
- 1 jalapeno finely chopped
- 1 lrg onion, finely chopped
- 4 cooked chicken breasts, chopped or 1 shredded rotisserie chicken
- 2 (10 oz) cans red enchilada sauce
- 1 1/2 tsp cumin1/2 tsp salt
- 2 tsp lime juice
- 1 1/2-2 cups monteray jack cheese
- sour cream to garnish
