MAGIC COOKIE BARS (Makes 36 bars)

Preheat oven to 350 degrees (325 for glass dish)
- 1/2 cup margarine or butter (I use sweet butter)
- 1 1/2 cups graham cracker crumbs
- 1 14 oz can Eagle Brand Sweetened Condensed Milk
- (Not evaporated milk)
- 1 6-ounce package semi-sweet chocolate chips
- 1 3 1/2 oz can flaked coconut (1 1/2 cups)
- 1 cup chopped nuts

Mix meat mixture well except the matzo meal

- 4 lbs ground meat 2 large cans of tomato sauce
- 3 large eggs 3 cans water
- 1/4 cup onion flakes 1 teaspoon sour salt
- 1/4 cup cold water 15 packets of sweet & low or
- 1/2 teaspoon salt equal
- 1/2 teaspoon pepper 1 teaspoon lemon juice
- 1 teaspoon minced garlic (optional)
- 1/4 cup ketchup
- 1/2 cup matzo meal

Cut chicken lengthwise into 1-inch-wide strips (wash hands)
- 1 3/4 lb boneless, skinless chicken thighs (or breasts)
- 1/4 cup all-purpose flour
- 1 teaspoon seasoned salt
- 1 teaspoon dried Italian seasoning
- Large zip-top bag
- Cooking spray
- 2 teaspoons roasted garlic
- 1 lb steak-topper vegetables (fresh pre-sliced mushrooms, onions, bell peppers)

- 1 jar pasta sauce (2426 oz)

- 1 tsp baking soda
- 1/2 tsp salt

- 1 cup sugar
- 1 tsp milk
- 3 eggs
- 1 cup sour cream
- 1 tsp vanilla

1. Combine rice and broth in a small saucepan
- 1 cup instant brown rice
- 1 cup vegetable broth
- 2 eggs, lightly beaten
- 2 teaspoons canola oil
- 6 ounces asparagus spears, trimmed and
- cut into 1-inch pieces (about 1/2 bunch)
- 1 medium red bell pepper, thinly sliced into 1-inch pieces
- 4 scallions, cut into 1-inch pieces
- 1 clove garlic, minced
- 1 tablespoon minced fresh ginger
- 4 teaspoons reduced-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon toasted sesame oil
- Hot red pepper sauce, to taste

- 2 medium zucchini, halved lengthwise
- 2 medium yellow squash, halved lengthwise
- 1/4 cup olive oil
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt, divided
- 1/2 teaspoon fresh coarse ground black pepper, divided
- 2 tablespoons fresh lemon juice
- 2 teaspoons grated lemon rind
- 1 pinch red pepper flakes
- 2 tablespoons finely chopped fresh basil

- 1 med eggplant
- 1 medium onion thinly sliced
- 2 cups zucchini thinly sliced
- 1 large green pepper thinly sliced
- 1 clove garlic minced
- 3 tbs oil
- 10 oz mushrooms sliced
- 1 pkg cherry tomatoes halved
- 2-3 tb fresh parsely chopped
- 2 tsp salt
- 1/2 tsp pepper
- 1 bay leaf
- 2 tsp basil

- yellow or white cake mix
- 1 box pistachio instant pudding
- 4 eggs
- 1 tsp almond extract
- 1/2 cup water
- 1/2 cup oil
- 1/2 cup oj
- 1/2 cup jersey's chocolate syrup
- 1/2 cup chopped walnuts
- 1/2 cup choc bits
Eggplant Lasagne

This is one of those recipes that I like to make at the beginning of a week and re-heat throughout the week
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 lbs Lean Ground Beef (can replace with ground chicken or ground turkey)
- 1 28 oz. can Crushed Tomatoes
- Salt, Pepper, Dried Basil, Dried Oregano and Crushed Red Pepper to taste
- 2 large Eggplants
- 2 eggs, beaten.
- 1 15oz. tub Whole Milk Ricotta
- 2 cups Shredded Whole Milk Mozzarella
- 1 cup Fresh Spinach
- 1 cup Fresh Mushrooms, sliced
