Mom's(Sydney's mom in law) Stuff Cabbage
- Meat Filling Sauce
- 4 lbs ground meat 2 large cans of tomato sauce
- 3 large eggs 3 cans water
- 1/4 cup onion flakes 1 teaspoon sour salt
- 1/4 cup cold water 15 packets of sweet & low or
- 1/2 teaspoon salt equal
- 1/2 teaspoon pepper 1 teaspoon lemon juice
- 1 teaspoon minced garlic (optional)
- 1/4 cup ketchup
- 1/2 cup matzo meal
Mix meat mixture well except the matzo meal. Add matzo meal. If meat is too soft add a little more matzo meal until meat is firm enough to hold together.
Place 2 or 3 tablespoons of meat in center of cabbage leaf & roll up.
Prepare large roasting pan with cover. Preheat oven to 350 degrees. Spray pan to avoid food from sticking to bottom of pan.
Line bottom of pan:
1 large sliced onion
pinch of salt,pepper & paprika
i whole box of ginger snaps overlapping cookies on bottom of pan.
Place rolled cabbage on this layer. Any left over leaves can cover the top of rolls
You must taste & adjust for sweetness. Add more sweet & low or sour salt slowly. Pour sauce over cabbage rolls to cover, checking to see if sauce is ok. If needed, add a small can of tomato sauce and water. Adjust to taste. Make sure sauce covers cabbage rolls. Bake for 1 hr.
Note: Meat mixture can be used for meatloaf. Glaze top of meatloaf with ketchup before baking
