Pasta with Ratatooli Sauce

Ingredients
- 3 cups of uncooked pasta (rolotini)
- 1 med eggplant
- 1 medium onion thinly sliced
- 2 cups zucchini thinly sliced
- 1 large green pepper thinly sliced
- 1 clove garlic minced
- 3 tbs oil
- 10 oz mushrooms sliced
- 1 pkg cherry tomatoes halved
- 2-3 tb fresh parsely chopped
- 2 tsp salt
- 1/2 tsp pepper
- 1 bay leaf
- 2 tsp basil

Preparation
Step 1
Cook pasta according to pkg directions. Drain well. Saute eggplant , onion, zucchini, green pepper & garlic in oil until tender but not browned. Add mushrooms saute about 2 mins. Add cherry tomatoes, parsley, salt ,pepper, bay leaf & basil. Simmer 10 mins. Combine veg mixture & cooked pasta in a large serving bowl. Toss lightly until all ingredients are blended. Serve warm or cold
