Pan-Fried Catfish Sandwich with Chipotle-Lime Slaw

- 1 cup all-purpose flour
- 1 1/2 tablespoons chili powder
- 3 teaspoons freshly cracked black pepper, divided
- 1/2 cup dark beer
- 3/4 cup whole-grain or stone-ground mustard
- 2 cups panko bread crumbs
- 1 tablespoon granulated garlic
- 1 tablespoon paprika
- 1 teaspoon kosher salt
- 1 pound catfish fillets (cut into 4 pieces)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 limes, zested and juiced
- 1 tablespoon chipotle in adobo
- 1/2 teaspoon granulated sugar
- 2 tablespoons white vinegar
- Kosher salt and freshly cracked black pepper
- 1/2 head green cabbage, thinly shredded
- 1/4 red onion, thinly sliced
- 1/2 red bell pepper, diced
- 3 scallions, thinly sliced
- 1/4 cup fresh cilantro leaves
- 2 tablespoons unsalted butter, room temperature
- 4 Cuban rolls, split lengthwise

Pioneer Woman Meatloaf

Preheat oven to 350 degrees Pour the milk over the bread and allow it to soak in or several minutes
- 1 cup milk*
- 6 bread slices*
- 2 lbs ground beef
- 1 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/4 teaspoon seasoned salt, such as Lawry’s
- freshly ground black pepper
- 1/4 to 1/2 cup minced flat-leaf parsley
- 4 eggs, beaten
- 8-12 thin bacon slices (I used Hormel frozen fully cooked bacon)
- Tomato Gravy**
- 1 1/2 cup ketchup
- 6 tablespoons brown sugar
- 1 teaspoon dry mustard
- Dash or two of hot sauce – more if you like heat

- 1 large bunch kale, coarsely chopped, washed, and dried (about 10-12 oz. kale)
- 2 tsp. olive oil + plus a bit more for greasing pan
- 1 can (14. oz) artichoke hearts or bottoms, drained and chopped
- 8 oz. part-skin ricotta cheese
- 3/4 cup grated Parmesan (plus a few tablespoons more for spinkling on top if desired)
- 6 eggs, beaten
- salt and fresh-ground black pepper to taste

- 1 cup yellow cornmeal
- 3/4 cup self-rising flour
- 1 teaspoon salt
