Banana Fudge Smoothie

Instructions Combine all ingredients in a blender or food processor

In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes
- 1/4 cup butter, softened
- 1 cup packed brown sugar

- 1 large eggplant (1 1/2 pounds)
- Good olive oil
- 4 ounces jarred roasted red peppers, chopped

Buffalo Fries Recipe

Bake fries in a single layer on a baking sheet according to the package
- 1/2 bag of frozen shoe string french fries
- 1 teaspoon cayenne powder
- 1/2 teaspoon cajun seasoning
- 1 tablespoon of buffalo wing sauce plus extra for drizzling (I used a bottle of Frank’s RedHot Wing Sauce: Buffalo)
- Crumbled blue cheese
- Ranch dressing
- Garnish: green onion and cilantro, finely diced
