Roasted Tomatillo Salsa with Chipotle and Roasted Garlic

Set the oven or toaster oven to broil (alternatively, you can preheat the oven to 500°F) and preheat
- 1/2 pound tomatillos (5 or 6), husked and rinsed
- 3 chipotle mora chiles, wiped clean and stemmed
- 6 garlic cloves, peeled
- 1/2 cup water
- Rounded 1/4 teaspoon fine salt, or 1/2 teaspoon kosher salt

Preheat oven to 400 degrees F
- 12 egg roll wrappers (roughly 4 square inches)
- 1 cup cooked and shredded chicken (6 ounces)

Homemade Crispy Seasoned French Fries

Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil
- 2 1/2 pounds russet potatoes, peeled
- 1 cup all-purpose flour
- 1 teaspoon garlic salt
- 1 teaspoon onion salt
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 cup water, or as needed
- 1 cup vegetable oil for frying
Jalapeno Hushpuppies

Heat the oil to 350 degrees F
- 1 1/2 quarts peanut oil, for frying
- 1 1/2 cups self-rising cornmeal
- 1 cup self-rising flour
- 1/2 cup chopped onion
- 1 (7-ounce) can diced jalapeno peppers, drained or 3/4 cup fresh jalapenos, seeded and finely diced
- 1 (15-ounce) can creamed corn
- 2 large eggs, lightly beaten
- Salt and freshly ground black pepper
- Paula Deen's Sweet and Spicy Chili Sauce, for dipping, optional

- 1 pound jumbo shrimp, peeled and deveined
- 2 tablespoons dried oregano
- Kosher salt and freshly ground black pepper
- Olive oil, for drizzling
- 2 tablespoons olive oil
- 8 ounces pancetta, cut into 1/4-inch cubes
- 3 cloves garlic
- 1 cup packed fresh parsley leaves
- 1/2 cup fresh oregano leaves or 2 tablespoons dried
- 1/3 cup red wine vinegar
- 1 cup extra-virgin olive oil
- 3 tablespoons lemon juice

Oven Roasted Potato 'Fries'

- 4 large russet potatoes, scrubbed, but not peeled
- 3 to 4 tablespoons olive oil
- Pinch sea salt
- Freshly ground black pepper
- Dash smoked paprika
- Dash steak spice seasoning

- 28-ounce can whole tomatoes (peeled) with juice
- 2 10-ounce cans Rotel (diced tomatoes with green chilies)
- 1/4 cup chopped onion
- 1 clove garlic, chopped
- 1 jalepeño, quartered and sliced thin
- 1/2 cup cilantro
- Juice from 1/2 a fresh lime
- 1/4 teaspoon salt
- 1/4 teaspoon granulated sugar
- 1/4 teaspoon ground cumin
