- 1 3/4 cups sugar
- 1/4 teaspoon salt
- 1 cup cake flour, sifted
- 12 egg whites (the closer to room temperature the better)
- 1/3 cup warm water
- 1 teaspoon orange extract, or extract of your choice
- 1 1/2 teaspoons cream of tartar
Mexican Shrimp and Grits

Peel the shrimp and set aside, reserving the shrimp shells
- 1 pound medium fresh shrimp, shells left on
- 6 cups water
- 1 teaspoon salt, divided
- 3/4 cup white grits
- 3 tablespoons butter
- 6 ounces pepper jack Velveeta cheese, cubed
- 1/2 pound chorizo sausage, casings removed
- 3 tablespoons olive oil, optional
- 1 1/2 cups chopped Vidalia onion
- 1 red bell pepper, seeded and chopped into 3/4-inch pieces
- 1 jalapeno pepper, seeded and minced
- 3 tablespoons all-purpose flour
- 2 tablespoons heavy whipping cream
- 1 teaspoon fresh lime juice
- 2 green onions, chopped, plus more for garnish
- 3 tablespoons chopped fresh cilantro leaves
- 1/8 teaspoon ground black pepper

Down to Earth Granola Weight Watchers

Weight Watchers recipe - 1 cup = 4 points
- 4 cups old fashioned oats
- 1/2 cup sliced almonds
- 1/2 cup packed light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup cooking oil
- 1/4 cup honey

Shrimp Scampy

Cook pasta as directed on box
- Pasta ( I like shells better holds sauce the best).
- 2 lbs Shrimp
- 1/2 stick of butter
- 2-tbs of Rosemary
- 1 - clove of garlic chopped
- 1/2 cup of white wine
- 1 - whole lemon or juice
- 1 - bag of mixed Italian cheese
- Salt and Pepper to taste
Pork Cracklings with Green Salsa (Chicharrones en Salsa Verde)

In a heavy large saucepan, place the tomatillos, garlic, onion and 3 cups of water over medium-high heat
- 15 medium tomatillos
- 3 cloves garlic
- 1/2 white onion
- 1 tablespoon olive oil
- 1/4 cup fresh cilantro leaves, plus 2 tablespoons chopped, for garnish
- 1 teaspoon kosher salt, plus more for seasoning
- 1/2 teaspoon sugar, optional
- One 8-ounce bag chicharrones
- 10 corn tortillas, warmed, for serving
Creole Chicken Salad

Mix Mayo, Creole Seasoning, dill weed, paprika in small bowl
- 1 cup of mayonaise
- 3/4 tsp. Creole seasoning
- 1/4 tsp. Dill Weed

- 4 cups of chopped cooked chicken
