- 24 hot green chile peppers, such as jalapeno, poblano, hatch or Cubanelle
- 1/4 cup/60ml olive oil

- 1 onion, finely chopped
- 2 tablespoons/30ml distilled white vinegar
- 1 tablespoon/15ml coriander seeds, ground
- 3 cloves garlic, minced

1. Preheat oven to 450°. Unroll dough; pat to an even thickness on a lightly greased baking sheet
- 1 (11-oz.) can refrigerated thin pizza crust dough
- 3 tablespoons refrigerated pesto sauce
- 1/2 pound medium-size shrimp (4 1/50 count), peeled and cooked
- 1 cup halved grape tomatoes
- 1/3 cup freshly grated Parmesan cheese

Fried Calamari

Clean the calamari and cut the bodies into thick rings, reserving the tentacles separately
- 1 pound fresh calamari
- 2 cups milk
- Juice of 1 lemon
- 1 teaspoon garlic hot sauce (recommended: Tabasco)
- 2 cups flour
- Salt and freshly ground black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon cayenne pepper
- 3 eggs
- Vegetable oil, for frying
- Puttanesca Dipping Sauce, recipe follows

Ricotta Cheese Cookies

Preheat oven to 350 degrees F
- Glaze:
- 2 Sticks Of Butter At Room Temperature
- 2 Cups Of Sugar
- 1 (15 oz) Container Of Full Fat Ricotta Cheese
- 2 Teaspoons Vanilla Extract
- 2 Eggs, Lightly Beaten
- Dash Of Salt
- 1 Teaspoon Baking Soda
- 1 Teaspoon Finely Chopped Lemon Zest
- 4 Cups All-Purpose Flour
- 1 Cup Powdered Sugar
- Lemon Juice
- Colored Sprinkles
Kalyn Avocado Sauce or Dip

- 2 medium or 3 small ripe avocados
- 1-2 green onions, very thinly sliced (white and light green parts only)
- 3 T fresh-squeezed lemon juice (I used my frozen lemon juice)

- 1 tsp. celery salt (or more)
- 2 tsp. Green Tabasco sauce (or more if you like it spicy)
