French Onion Soup II

The trick to a great French onion soup is starting with good stock
- 6 large red or yellow onions, peeled and thinly sliced.
- Olive oil
- 1/4 teaspoon of sugar
- 2 cloves garlic, minced
- 8 cups of beef stock, chicken stock, or a combination of the two (traditionally the soup is made with beef stock)
- 1/2 cup of dry vermouth or dry white wine
- 1 bay leaf
- 1/4 teaspoon of dry thyme
- Salt and pepper
- 8 slices of toasted French bread
- 1 1/2 cups of grated Swiss Gruyere with a little grated Parmesan cheese
Basil Vinegar (D/V)

Rinse and dry basil leaves
- 1/4 cup fresh basil leaves
- two 1/2-inch x 3-inch strips lemon peel (zest)
- 1 cup white or red wine vinegar
- 1 small sprig fresh basil
Mom's Gravy (S/G)

Blend 1 cup of cold broth with flour
- 4-1/2 cups chicken broth
- 1/2 cup flour
- 2 teaspoons bouillon
- 1 teaspoon Kitchen Bouquet
Summer Lentil Salad (S)

Melt the tablespoon of butter then saute the garlic and onion with the lentils and salt
- 1/2 sweet onion, chopped
- 1 large scallion
- 1 tsp sea salt
- 1/2 tsp cinnamon
- 1/2 tsp coriander
- 1/4 tsp onion powder
- pinch of garlic salt and black pepper
- 3 tsp vegetable bouillon with 3 cups warm water
- 1 garlic clove, crushed
- 1 tablespoon butter
- 3/4 cup lentils
- 3/4 cup chopped tomatoes (I used canned)
- 1 medium yellow bell pepper
- 1 squash (zucchini)
- 1/2 tablespoon butter
My Salmon Cakes

Mix all ingredients together and chill for at least 1 hour before forming patties
- 4 cans pink salmon, drained and de-boned
- 4 bunches scallions, chopped
- 2 eggs
- 1-2 cups Ritz cracker crumbs
- 1-2 tablespoons dill weed
- 1-2 teaspoons onion powder
- red tobacco sauce to taste
- ketchup
- mayonnaise

- 12 12 12 cupcake liners
- 12 12 12 oz rolled oats
- 32 32 32 oz Greek yogurt
- 1 1 1 cup mixed berries
Freekeh Filling

Use this to stuff roasted peppers, bell peppers or cabbage leaves, or eat as a side dish
- 1 cup uncooked freekeh
- 1 can no-salt peas, drained
- 1 About 1 cup sun-dried tomatoes
- 1 large sweet onion, chopped
- 1 package baby portobello mushrooms, chopped
- 3-4 cloves roasted garlic, chopped
- fresh ground black pepper
- 2 small containers crumbled goat cheese
- 12-15 large roasted whole red and yellow peppers
- Avocado or olive oil
- Substitute with halved bell peppers or blanched cabbage leaves
Cranberry Lentil Salad (S)

1. In a saucepan bring 4 cups of water and lentils to a boil
- 1 cup lentils
- 1/2 cup dried cranberries
- 1/4 cup parsley, chopped
- 1 teaspoon cumin
- 1/2 cup walnuts, chopped
- juice of 1 small lemon
- 2 tablespoons olive oil
Roasted Chicken Thighs and Broccoli
