Paleo Coq Au Vin + Cheesy Cauliflower Grits

Coq au vin is my favorite dish to make in the winter
- GREDIENTS
- For the coq au vin
- 4 oz pancetta
- 3-4 pound whole chicken, cut into eighths
- 1 pound carrots
- 1 large yellow onion, roughly chopped
- 10 ounces sliced baby portabella mushrooms
- 3 cloves garlic, minced
- 1/2 bottle red wine
- 1 1/2 cups chicken stock
- 20 sprigs fresh thyme
- salt to taste
- For the cheesy cauliflower grits
- 1 large head cauliflower
- 4 cups chicken stock
- 2 oz cream goat cheese
- 1 cup grated Parmesan
- 1/4 to 1/2 teaspoon salt (to taste)
- 1/8 teaspoon black pepper
Paleo VEGAN SWEET POTATO PIE WITH COCONUT ALMOND CRUST

This delicious purple sweet potato pie is both vegan and paleo and made with an addictive coconut almond crust
- For the crust:
- 1/4 cup coconut oil, melted
- 1/4 cup honey (or sub maple syrup)
- 1 cup almond meal
- 1 cup unsweetened shredded coconut
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- For the pie filling:
- 2 lb. purple yams, peeled and cut into 1-inch rounds (about 4 cups worth)
- 3/4 cup canned coconut milk (not low fat)
- 1/2 cup maple syrup (see notes)
- 1 1/2 tablespoons tapioca starch
- 1 tablespoon fresh lime juice
- 2 teaspoons ground cinnamon
- 1 teaspoon sea salt
- 1 teaspoon ground ginger
- 1/2 teaspoon all spice
- 1/4 - 1/2 cayenne pepper (neither amounts are very spicy but the 1/2 teaspoon does stand out more)
- 1/4 teaspoon ground cloves
- For the coconut whipped cream:
- 1 can of full fat, additive free coconut milk (make sure it does not contain guar gum)
- 2 tablespoons powdered sugar

- Meatballs:
- 1 lb grass fed ground beef 80-85% lean
- 1 small onion minced
- 1 tbsp ghee, to cook onion
- 1/4 cup almond flour
- 1 large egg
- 3 tbsp coconut milk
- 2 tsp coconut aminos
- 1 tsp garlic powder
- 1 tbsp fresh parsley minced
- 1/4 tsp allspice
- 1/4 tsp nutmeg
- 1/2 tsp sea salt
- 1/8 tsp pepper
- Gravy:
- 3 Tbsp ghee
- 1 tbsp + 1 tsp arrowroot starch or tapioca flour
- 1 3/4 cup beef or chicken bone broth
- 1/2 cup full fat coconut milk blended prior to adding
- 1 tsp spicy brown mustard *optional, adds flavor
- 1 Tbsp coconut aminos *optional, adds flavor
- salt and pepper to taste
- Mashed Potatoes:
- 2 lbs russet potatoes peeled and cut into 2” pieces
- 1/2 cup coconut milk
- 1/4 cup ghee
- 3/4 tsp sea salt
- 2-3 Tbsp nutritional yeast optional (for flavor)
Paleo Winter Squash Carbonara with Pancetta and Sage

RECIPE PREPARATION Heat oil in a large skillet over medium-high heat
- 2 tablespoons olive oil
- 4 oz. pancetta (Italian bacon), chopped
- 1 tablespoon finely chopped fresh sage
- 1 2-lb. kabocha or butternut squash, peeled, seeded, cut into ½” pieces (about 3 cups)
- 1 small onion, chopped
- 2 cloves garlic chopped
- Kosher salt and freshly ground black pepper
- 2 cups low-sodium chicken broth
- 12 oz. Paleo fettucine or linguine
- ¼ cup finely grated Pecorino, plus shaved for serving
Shrimp and Chorizo Skewers

In a small bowl, whisk together the garlic, paprika and olive oil
- 2 cloves garlic, finely chopped
- 2 teaspoons paprika
- 1/2 cup olive oil
- 1 pound Spanish chorizo, sliced into 1/2-inch pieces
- 2 pounds large shrimp, peeled and deveined, tails left on
- 20 (6-inch) bamboo skewers, soaked in water
- Sea salt
- Freshly ground black pepper
- 2 lemons, cut into small wedges

- 2 tablespoons lime juice

- 1 to 2 tbsp. Sriracha chili sauce
- 1 1/2 pounds slender Japanese or Chinese eggplant, ends trimmed
- 3/4 pound ground pork
- 3 tablespoons canola oil, divided
- 1/2 cup thinly sliced shallots
- 2 tablespoons chopped cilantro
Paleo Slow Cooker Chicken Pad Thai with Veggie Noodles

Season your chicken with salt and pepper, and a little bit of the cayenne pepper and ginger powder
- 2 to 3 pounds of chicken thighs or breasts (skin removed).
- 2 medium zucchini.
- 1 large carrot.
- 1 handful of bean sprouts (optional).
- 1 small bunch of green onions (for sauce and garnish)
- 1 cup of coconut milk.
- 1 cup of chicken stock.
- 2 heaping tablespoons of SunButter (sunflower seed butter, to replace peanut flavor).
- 1 tablespoon of Coconut Aminos (or wheat-free tamari, to replace soy sauce).
- 2 tsp of Fish Sauce. I use Red Boat fish sauce, which is paleo-friendly.
- 2 tsp of powdered ginger (or about 1 tbsp freshly minced ginger).
- 2 cloves of garlic, smashed and minced, or 1 tsp of garlic powder.
- 1 tsp of cayenne pepper.
- 1 tsp of red pepper flakes.
- Salt & Pepper for seasoning the chicken.
- Chopped cashews for garnish (optional).
