Tequila Chipotle Shrimp Tacos

Fried corn tortillas (tostadas) are a great base for spicy shrimp and zingy sour cream
- 1/3 cup plus 1 Tbs. olive oil
- 1/2 tsp. pure chipotle chile powder
- Kosher salt
- 1 lb. extra-large (26 to 30 per lb.) shrimp, peeled and deveined
- 3/4 cup sour cream
- 2 medium limes, 1 finely grated to yield 2 tsp. zest and squeezed to yield 1 Tbs. juice; the other cut into 4 wedges
- 1/2 tsp. honey
- 1/4 cup white tequila
- 8 5- to 6-inch corn tortillas
- 1 cup thinly sliced green cabbage
- 1 large firm-ripe Hass avocado, diced
- Chopped cilantro, for garnish (optional)
Filipino BBQ Marinade

1 Mix together all ingredients in a bowl
- 1/3 cup soy sauce
- 1/3 cup ketchup
- 1/4 cup 7Up or Sprite
- 1/4 cup brown sugar
- 1 tablespoon calamansi juice
- 1/2 tablespoon minced garlic
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
Olympic Seoul Chicken

1. Mix together the vinegar, soy sauce, honey, and ginger
- 1/4 cup (60ml) rice vinegar (unseasoned)
- 3 tablespoons (45ml) soy sauce
- 2 tablespoons (30ml) honey
- 1-inch (3cm) piece fresh ginger, peeled and minced
- 8 chicken thighs, skinned
- 10 cloves garlic, peeled and minced
- 1 1/2 teaspoon chili powder (I used cochutgaru, but any will do)
- a handful of chopped green onions, including the dark green part

1. Preheat the oven to 400°
- Hand Pies:
- 2 1/2 cups all-purpose flour
- Pinch of salt
- 2 tablespoons sugar
- 2 sticks cold butter, cut into cubes
- 1/3 cup cold water
- 1 cup jam, jelly or preserves
- Frosting:
- 3/4 cup confectioners’ sugar
- 3 tablespoons heavy cream
- 1 teaspoon pure vanilla extract
- Sprinkles (optional)
Hoisin Chicken Wraps

Warm oil in large skillet over medium heat
- 1 tablespoon vegetable oil
- 2 garlic cloves, finely chopped
- 1 (1-inch) piece fresh ginger, peeled and finely chopped
- 3 scallions, white and light green parts, finely chopped
- 3 1/2 cups shredded meat from 1 skinned rotisserie chicken
- 1/4 cup bottled hoisin sauce
- 1 teaspoon rice vinegar
- 1/2 cup cashews, chopped
- 4 large flour tortillas
- 12 large lettuce leaves, shredded
- 2 carrots, shredded
