Easy Chicken Stroganoff

This one-skillet chicken dish features a creamy mushroom sauce and a whole lot of flavor
- 2 tablespoons butter
- 1 pound skinless, boneless chicken breast halves
- 6 ounces sliced mushrooms
- 1 medium onion
- 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup
- 1/2 cup sour cream
- plain yogurt
- 4 cups medium egg noodles
- Chopped fresh parsley
Grilled Fruit Kabobs Glazed with Punchy Cumin and Maple Glaze

Heat up your grill and soak some bamboo skewers in water while you prepare the fruit
- Kabob:
- 4 C. cubed fruit variety (pineapple, peaches, bananas etc.)
- Glaze:
- 1/2 C. maple syrup
- 1/4 tsp. cumin, ground
- 1/4 tsp. cinnamon, ground
Refrigerator Lime Cheesecake

Arrange 22 split ladyfingers around the edges and 16 split ladyfingers on the bottom of an ungreased 8-in
- 38 ladyfingers, split
- 1 envelope unflavored gelatin
- 1/4 cup lime juice, chilled
- 2 packages (8 ounces each) cream cheese, softened
- 1 cup sugar
- 6 ounces white baking chocolate, melted and cooled
- 2 teaspoons grated lime peel
- 1 cup heavy whipping cream, whipped
- Fresh strawberry and lime slices, optional
Quinoa Pudding

Place quinoa in a fine mesh sieve and rinse under cold water for 1 minute
- 3/4 cup quinoa
- 2 1/2 cups milk (whole will give the pudding a creamier consistency, but 2% will also work)
- 1/2 cup heavy cream
- 1/3 cup sugar
- 2 teaspoons vanilla extract
- Pomegranate seeds, from one pomegranate (you may also substitute raspberries, blueberries, strawberries, or other fruit)
Hot Spiced Cider Sachets

- 6 cinnamon sticks, about 3" long
- 30 whole cardamom pods
- 30 whole cloves

HONEY COOKIES

In a saucepan, cook honey and butter together until it reaches the boiling point
- 1 cup butter or non-hydrogenated vegetable shortening
- 1 cup honey (or to taste)
- 1 tsp. baking soda
- 1/2 tsp. ea. cinnamon, cloves, allspice
- 3 3/4 cups white whole wheat flour
Mango-Orange Jam

- 3 lbs ripe mangoes, peeled, pitted, chopped
- 1 teaspoon lemon juice
- 1/4 cup orange juice
- 2 tablespoons orange zest, finely grated
- 2 tablespoons dry pectin (1 oz. or 1/2 pkt)
- 3 cups sugar

Directions To prepare Crumb Crust, preheat oven to 375 degrees
- Crumb Crust:
- 1 1/2 C. vanilla wafer crumbs
- 5 Tbs. margarine or butter, melted
- 1/2 tsp. grated lime peel
- Strawberry Filling:
- 1 pint strawberries
- 2 limes
- 1 14 oz. can sweetened condensed milk
- 2 Tbs. orange-flavor liqueur
- 1 C. heavy or whipping cream

- 1/2 C. sugar
- 3 Tbs. water
- 1 Tbs. light corn syrup
- 1/3 C. heavy cream
- 2 Tbs. unsalted butter
- 1/2 tsp. fleur de sel or other fine-grained sea salt
- Cake Layers:
- 1 3/4 C. all purpose flour
- 2 C. sugar
- 3/4 C. unsweetened cocoa powder
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 2 large eggs, room temperature
- 1 C. strong black coffee or 2 tsp. instant coffee powder plus 1 C. boiling water
- 1 C. buttermilk or 1 Tbs. apple cider vinegar plus milk to equal 1 C.
- 1/2 C. vegetable oil
- 2 tsp. pure vanilla extract
- Chocolate Buttercream:
- 1/2 C. (1 stick) unsalted butter, softened
- 3/4 C. unsweetened cocoa powder
- 2 C. powdered sugar, unsifted
- 1 lg. pinch of salt
- 5 Tbs. milk, half and half, or heavy cream
- 1 tsp. pure vanilla extract

- 3 T sugar
- 1/2 c butter, softened

- 2 T brandy
- 2 c conf sugar
- 2 t nutmeg
- 2 t cinnamon
