Monterey Chicken

1. Before start grilling, cut bacon in medium dice and cook it in skillet over medium-low heat until crispy
- 2 chicken breasts - boneless, skinless
- 1/4 c mozzarella cheese
- 1/4 c monterey cheddar or just cheddar cheese
- 4 slices bacon
- 1/2 t garlic powder
- 1/2 t onion powder
- 1/2 c bbq sauce
Simple Salisbury Steak

In large bowl mix 1/4 c soup, beef, crumbs, onion & egg
- 10 3/4 oz cream mushroom soup
- 1 lb ground beef
- 1/2 c dry bread crumbs
- 1/4 c onion, fine chop
- 1 egg, beaten
- 1 T veg oil
- 1 1/2 c fresh mushrooms, sliced (4 oz)
Balsamic Chicken Pasta Salad

Directions Cook pasta according to package directions
- 3 cups uncooked bow tie pasta
- 4 cups cubed cooked chicken breast
- 2 cups chopped tomatoes
- 1/2 cup chopped red onion
- 4 bacon strips, cooked and crumbled
- 1/4 cup crumbled Gorgonzola cheese
- 1/2 cup olive oil
- 1/4 cup minced fresh basil
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 teaspoon minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
Cheesy Hamburger Ramen

Ramen Noodles
- 1 lb ground beef
- 1 c diced red onion
- 1 t salt, divided
- 2 pkg (3 oz) ramen noodles, any flavor (discard seasoning)
- 1 T unsalted butter
- 1 T flour
- 1 1/4 c milk
- 1/4 t black pepper
- 14 oz diced tomatoes, drained
- 1 1/2 c shredded sharp cheddar cheese
- 1/4 c ketchup
Chicken Enchilada Casserole

In a small skillet, saute onion and green pepper in butter until tender
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 teaspoon butter
- 3 cups shredded cooked chicken breast
- 2 cans (4 ounces each) chopped green chilies
- 1/4 cup all-purpose flour
- 1-1/2 to 2 teaspoons ground coriander
- 2-1/2 cups reduced-sodium chicken broth
- 1 cup (8 ounces) reduced-fat sour cream
- 1 cup (4 ounces) reduced-fat Monterey Jack or reduced-fat Mexican cheese blend, divided
- 12 corn tortillas (6 inches), warmed
