Pine Nut Brittle (Crocante)

Line a large baking pan or a cookie sheet with parchment, foil, or a silicone mat
- 1 cup granulated sugar
- 2 tbsp water
- 2 tbsp unsalted butter
- 2 tbsp light corn syrup
- 1 tsp kosher salt
- 1 cup pine nuts
Kitchen Potpourri

- 1/4 c whole cloves
- 1 c whole allspice
- 10 cinnamon sticks 3" long broken into pieces
- 8 small bay leaves
- 4 whole nutmegs
- 3 T star anise
- 2 T whole cardamom pods

- Basic recipe - no milk, 1 1/4 c flour, 1 1/4 c flour, use superfine sugar
- 4 lemons grated & sqeeze
- use lemon juice + about 3 T low fat plain yogurt to make 1 c
- 2 c yellow cornmeal
Frosted Cream Cheese Muffins

- Basic Muffin Recipe - no b soda, use dk brown sugar, 1 c sour cream instead of milk
- 1 c soft cream cheese

Key Lime Pie Poke Cake

Heat oven to 350°F for shiny metal or glass pan (or 325°F for dark or nonstick pan)
- 1 box Betty Crocker® SuperMoist® white cake mix
- 1 1/4 cups water
- 1 tablespoon vegetable oil
- 4 eggs
- Key Lime Filling
- 1 can (14 oz) sweetened condensed milk (not evaporated)
- 3/4 cup whipping cream
- 1/2 cup Key lime juice or regular lime juice
- 1 teaspoon grated lime peel
- 4 drops yellow food color
- 1 drop green food color
- Frosting
- 1 container (12 oz) Betty Crocker® Whipped vanilla frosting
- 2 teaspoons grated lime peel
