Veal Chops Valdostana Valdostana with Oven Frites and Haricots Verts

Preheat oven to 500°F and place a rack in the center
- 1 1/2-inch bone-in veal chops, butterflied and pounded on each side to 1/2-inch
- (one side will be a bit wider than the other)
- Salt and pepper
- 1 1/2 cups shredded Fontina Val d’Aosta or Gruyère cheese
- 1/2 cup Grana Padano or Parmigiano-Reggiano cheese, a couple of handfuls
- 1/8 About 1/8 pound (a few slices) Prosciutto di Parma or prosciutto cotto,
- julienned
- 3 tablespoons olive oil plus some for drizzling over fries and beans•
- 4 large cloves garlic, crushed, divided 12 sage leaves
- 1/2 cup dry white wine or dry vermouth
- 2 tablespoons butter
- Juice of 1/2 lemon
- 2 large Russet potatoes, washed and cut into very thin sticks no more than 1/8
- inch thick
- 1 pound haricots verts (thin green beans)
- 2 large shallots, very thinly sliced lengthwise
Beet Salad with Cinnamon Fried Goat Cheese

Preheat oven to 350 degrees
- 2 medium beets, scrubbed clean
- olive oil
- salt and pepper
- 1 clove garlic, crushed
- Fried Goat Cheese Rounds
- 1 eight ounce package goat cheese (chevre honey)
- zest 1 lemon
- 3 tablespoons shredded parmesan cheese
- 1 egg, beaten
- 1/2 cup flour
- 1/2 teaspoon (or to taste) cinnamon sugar
- 4 cups oil for frying
- Balsamic Vinaigrette
- 6 tablespoons balsamic vinegar
- 6 tablespoons extra virgin olive oil
- pinch kosher salt
- pinch pepper
- 2 tablespoon honey
Biscuits, 7-Up

Lightest, fluffiest biscuits ever!
- 4 cups Bisquick
- 1 cup sour cream
- 1 cup 7-up
- 1/2 cup melted butter
- BISQUICK RECIPE-
- 4 c. flour
- 6 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons shortening, oil, or melted butter
- Mix all together thoroughly and voila!
Chicken: Chicken Cutlets with Bell Pepper Ragout

Position a rack 6 " from broiler set on high
- 1 1/4 lb. ripe plum tomatoes(6-8) cored, halved lengthwise and seeded
- 1 med. red or orange bell pepper, seeded and cut into 3/4" pieces
- 1 med. yellow pepper, seeded and cut into 3/4" pieces
- 1 med. yellow onion, cut into medium dice
- 1/2 cup extra virgin olive oil
- 1/4 tsp. piment d'Espelette or 1/8 tsp. cayenne
- Kosher salt and freshly ground black pepper
- 1 med. clove garlic, mashed to a paste
- 3/4 cup all purpose flour
- 1 1/2 lb. boneless, skinless chicken breast halves, sliced into cutlets
- 2 Tbsp. nonpareil (Small) capers, rinsed and patted dry.
Mac ‘n’ Cheese, Skillet

1. Combine 2 cups of milk, macaroni, salt, and pepper in a large skillet over medium-high heat
- 3 cups whole milk, divided
- 2 cups uncooked elbow macaroni
- 1/2 Tbsp. salt
- 1/2 Tbsp. pepper
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
- 1 cup seasoned panko bread crumbs
- Cooking spray
CHICKEN, CITRUS-MARINATED WITH LENTIL-HERB SALAD

•Combine ingredients for the citrus marinade in a baking dish
- Marinated Chicken
- 6 chicken thighs, boneless, skin-on
- 1/2 orange, juice and zest
- 1/2 grapefruit, juice and zest
- 1/2 bunch parsley, torn
- 1/4 cup extra-virgin olive oil, plus more
- LENTIL-CITRUS SALAD
- 1 cup dried lentils (such as small French lentils)
- 1 orange (segmented, 2 tablespoons of juice reserved)
- 1 grapefruit (segmented, 2 tablespoons of juice reserved)
- 2 tablespoons shallot, finely chopped
- 2 teaspoons honey
- 2 tablespoons white wine vinegar
- 1/3 cup extra-virgin olive oil
- 1 cup parsley leaves

- After removing the 3 cups of batter, combine the remaining cup of Amish Friendship Bread starter with the following ingredients in a large bowl:
- Day 1 - receive the starter (the recipe for the starter is noted in the Directions Section at right)
- Day 2 - stir
- Day 3 - stir
- Day 4 - stir
- Day 5 - Add 1 cup each flour, sugar and milk.
- Day 6 - stir
- Day 7 - stir
- Day 8 - stir
- Day 9 - stir
- Day 10 - Add 1 cup flour, 1 cup sugar and 1 cup milk. Divide into 4 containers, with 1 cup each for three of your friends and 1 cup for your own loaves. Give friends the instructions for Day 1 through Day 10 and the following recipe for baking the bread.
- 2/3 cup oil
- 3 eggs
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 to 1 1/2 tsp. cinnamon
- 1 cup sugar
- 2 cups flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- Using a fork beat by hand until well blended. You can add 1 cup raisins and 1 cup nuts (optional).
- Grease two loaf pans with butter, sprinkle with sugar instead of flour.
- Bake at 325 degrees F for 45 minutes to 1 hour (individual oven temperatures vary). Cool 10 minutes, remove from pans. Makes two loaves of Amish Friendship Bread.

- 1 3/4 cup diced carrots (3 medium)
- 1 3/4 cup diced yellow onion (1 large)
- 2 Tbsp olive oil
- 5 cloves garlic, minced
- 3 (28 oz) cans whole Roma tomatoes
- 1 (32 oz) carton vegetable broth
- 1/3 cup chopped fresh basil, plus more for garnish
- 2 bay leaves
- 1 Tbsp granulated sugar
- Salt and freshly ground black pepper, to taste
- 16 oz refrigerated three cheese tortellini
- 3/4 cup heavy cream
- Parmesan, shredded, for serving

Preheat the oven to 450 degrees F
- 2 tablespoons dijon mustard
- 1/2 teaspoon thyme leaves, chopped
- Kosher salt
- 1/4 teaspoon cayenne pepper
- 4 boneless, skinless chicken breast halves (about 8 ounces each)
- 3/4 cup freshly grated parmesan cheese
- 3/4 cup panko or dried coarse baguette breadcrumbs
- Cooking spray
