7-Layer Chili Dog Dip is the perfect way to start any festive party, summertime celebration, or casual BBQ
- CHILI CON CARNE:
- 1 tablespoon extra virgin olive oil, corn oil, or vegetable oil
- 1 pound ground chuck
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 2 tablespoons ancho chili powder
- 1/2 tablespoon grill seasoning, about half palmful
- 1/2 tablespoon ground cumin, about half palmful
- 1 teaspoon ground coriander, about 1/3 palmful
- 1/2 bottle lager-style beer
- 1/2 cup beef stock
- 1 14-ounce can chunky-style crushed tomatoes
- -LAYER CHILI DOG DIP:
- chili con carne
- 1 tablespoon extra virgin olive oil
- 4 hot dogs, diced
- 1 1/2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 pound bacon
- 1 cup vine-ripe tomatoes, diced
- 1/4 cup red onions, diced
- 1/4 cup cilantro, chopped, optional
- 1 bag corn tortilla chips
Pork Chops with Sage, Cider and Balsamic Vinegar

- For the cheesy mashed potatoes:
- ¼ cup aged balsamic vinegar
- ¼ cup fig preserves
- 2 tablespoons grainy Dijon mustard
- 1 cup cloudy apple cider
- 8 fresh figs or 2 crisp apples, for apples, peel, quarter, core, slice and saute 2-3 minutes in
- butter with a splash of lemon juice
- 4 Russet potatoes, peeled and quartered
- Salt
- 6 ounces taleggio, trimmed of rind and diced, or Fontina Val D'Aosta, shredded
- 1 cup milk, warmed
- White pepper
- Finely grated nutmeg, to taste, about ⅛ teaspoon

Combine sauce ingredients in a small pot and reduce over a low bubble for about 30 minutes
- 1 cup good quality organic ketchup
- 1/2 cup tomato passata or purée
- 1/2 cup beef stock
- 3 shots bourbon whiskey
- 1/4 cup Worcestershire sauce
- 2 tablespoons light brown sugar
- 2 tablespoons cider vinegar
- 1 teaspoon coarse black pepper
- 1 teaspoon celery seed
- 1 tablespoon chili powder or hot paprika
- 1 rib celery, minced with leafy tops
- 1/4 cup grated onion
- 2 large cloves garlic, grated or finely chopped
