Bengiet Douoghnuts

Pour boiling water over shortening, sugar and salt
- 1/2 c. boiling water
- 1/8 c. shortening
- 1/4 c. sugar
- 1/2 tsp. salt
- 1/2 c. evaporated milk
- 1/2 pkg. yeast
- 1/4 c. luke warm water
- 1 egg - well beaten
- 3 3/4 cups sifted flour (about)
Collard Greens - a Mess of

Melt butter with oil in a large Dutch oven over medium-high heat
- 2 Tbsp. butter
- 3 Tbsp. olive oil
- 1 small sweet onion - diced
- 3 garlic cloves - minced (about 1 Tbsp.)
- 1 smoked ham hock (of smoked turkey wing)
- 3 1 lb. pkgs fresh collard greens, washed, trimmed & cut into thin strips
- 1/4 to 1/2 cup diced jarred jalapeno peppers drained
- pepper sauce
Easy Blackberry Cobbler

Preheat oven to 375 Lightly grease 8x8 pan
- 4 cups Blackberries (frozen equals 1 small pkg) 1 Tbsp Lemon juice
- 1 egg
- 1 cup Sugar
- 1 cup Flour
- 6 Tbsp Butter - melted
- 1 pkg sml Vanilla pudding - not instant
- 2 1/2 cups Milk
Cream Cheese Pound Cake

Beat butter and cream cheese at medium speed with an electric mixer 2 minutes or until creamy

- 1 1/2 cups butter, softened
- 1 8 oz packageCream cheese, softened
- 3 cups sugar
- 6 large eggs
- 1 1/2 tsp vanilla extract
- 3 cups all-purpose flour
- 1/8 tsp salt
- Glaze-
- 1 cup powdered sugar
- 1/2 tsp vanilla
- 1 TBS milk, to consistency
Minestrone Soup - EXCELLENT

- 1 T. Olive Oil
- 1 c. Chopped Onions
- 8 oz. sliced fresh mushrooms (or I used 1 small can)
- 1 cup Carrots - thinly sliced
- 2 Cloves minced garlic or 1 tsp. bottled minced garlic
- 1 c. V-8 Juice (I like a little more broth so I increase this to 2 c.)
- 1 1/2 c. beef broth
- 2 1/2 c. chicken broth
- 2 c. water
- 1/2 c. uncooked short pasta (i.e. penne)
- 1 can (16 oz) rinsed & drained red kidney beans
- 1 c. (16 oz.) rinsed & drained chickpeas
- 2 (14 oz.) cans diced tomatoes (I used 2 28 oz. cans)
- 1 tsp. dried Italian seasoning
- 1 tsp. brown sugar (not too much but I did use a little more)
- 1/2 tsp. black pepper
- 1 c. frozen green peas
Cranberry-Orange Relish

Pulse cranberries in a blender or food processor 4-5 times or until coarsely chopped
- 1 12 oz pkg of fresh or frozen cranberries - thawed
- 1 orange, unpeeled, seeded, and cut into 6 wedges
- 3/4 cup chopped toasted pecans
- 1/2 cup sugar (substitute with Splenda)
- 1/2 cup fresh orange juice
- 1 Tbsp. Grand Marnier
Granola - Melinda's Homeade Granola

Preheat oven to 300 Mix the oats, nuts and grains in a large bowl
- 2 cups rolled oats (not instant)
- 1 cup toasted peanuts or almonds
- 1/4 cup sesame seeds
- 1/2 cup toasted sunflower seeds
- 1/2 cup unsweetened shredded coconut
- 1/4 cup toasted wheat germ
- 1/2 cup raisins
- 1/2 cup chopped dried fruit (apricots, pears, apples, craisins)
- 1/4 cup vegetable oil
- 1/2 cup honey
Cranberry Apple Casserole

You may have to adjust the sugar a little in this recipe
- 1 cup fresh whole cranberries (can be frozen)
- 2 cups apples - chopped & unpeeled (I used Honey Crisp but Granny Smith ok)
- 1/3 cup white sugar
- Vanilla (to taste - I added about 2 Tbsp.)
- 3/4 stick butter - melted
- 1 cup oatmeal
- 1/2 cup brown sugar (you may want to reduce amount to 1/3 cup)
- 1/2 cup chopped nuts (pecans or walnuts)
- 1/3 to 1/2 cup of Corn starch
General Tso Meatballs

In a large bowl, combine ground beef, Panko bread crumbs, 2 green onions, egg, garlic, ginger, and sesame oil
- 1 lb. ground beef
- 1/2 c. panko bread crumbs
- 4 green onions, thinly sliced, divided
- 1 egg
- 2 cloves garlic, minced
- 1 tsp. ginger, minced or grated
- 1 tsp. sesame oil
- kosher salt
- pinch red pepper flakes
- 1/4 c. cornstarch
- Vegetable oil, for frying
- 1/2 c. low-sodium chicken broth
- 1/4 c. soy sauce
- 2 tbsp. apple cider vinegar
- 2 tbsp. Hoisin sauce
- 1 tbsp. honey
- 2 tsp. sesame seeds
