Apple Cobbler for Two

Chicken & Wild Rice Soup (Panera Bread)

Melt olive oil in a large stock pot or Dutch oven over medium-high heat and sauté onion and carrot until softened
- 1 (6 oz.) package long grain and wild rice (including flavor packet)
- 1 (32 oz.) box low-sodium chicken or vegetable broth
- 3 cups water
- 1 cup cooked chicken, shredded
- 1 cup heavy cream or half-and-half
- 2 carrots, peeled and diced
- 1/2 small red onion, diced
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon dried marjoram, optional
- Kosher salt and freshly ground pepper, to taste
Bacon Cheeseburger Casserole

Bring a pot of salted water to a boil and cook the macaroni until tender, drain and set aside
- Bacon Cheeseburger Skillet
- 1 lb. ground beef
- 4 slices of bacon, cut up
- 1 onion, chopped
- 10 oz. can diced tomatoes with green chilies
- 8 oz. can tomato sauce
- 1 tsp. mustard powder
- 1/2 tsp. chili powder
- 1/2 tsp. each salt and pepper
- 4 oz. elbow macaroni
- 1/2 C. shredded cheddar cheese
Shrimply Delicious Shrimp Salad

Cut shrimp in half and pat dry
- 1 lb. large peeled & deveined cooked shrimp
- 1 cup chopped celery
- 1 large carrot - shredded
- 1/2 cup chopped onion
- 2 hard cooked eggs - chopped
- 3/4 cup mayonnaise (or half mayo & half sour cream)
- Salt & pepper to taste
- Lemon juice (squeeze or splash)
- Dill (sprinkle)
