Crisp Cole Slaw

Add all ingredients. Salt and pepper to taste
- 1 head Cabbage Shredded
- 2 Carrots Diced
- 1 Large Green pepper Diced
- 1 Large onion Diced
- 1 jar pimiento (medium)
- 1 cup Cider vinegar
- 1 cup Sugar
- 2 Tbsp. Celery Seed
- 2 Tbsp. Mustard sauce
Vinegar Braised Chicken Thighs

1. Season both sides of chicken generously with salt and pepper
- 4 pounds assorted bone-in, skin on chicken pieces (breasts and thighs)
- 2 pounds mushrooms (cremini, white, or baby bella), cleaned of any dirt or particles
- 2 cups low-sodium chicken broth
- 3/4 cup balsamic vinegar
- 1/4 cup red wine vinegar
- 1/4 cup apple cider vinegar
- 5 carrots, peeled and roughly chopped (could use baby carrots)
- 3 cloves garlic, crushed
- 1 yellow onion, chopped
- 1 bay leaf
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons all-purpose flour
- kosher salt and freshly ground pepper, to taste
- Add brown sugar to taste - maybe a tablespoon.
Quick Chicken Parmesan

Preheat oven to 450. Lightly spray baking dish with olive oil flavored or plain nonstick cooking spray
- 4 chicken breast, no skin, no bone cut in half
- 2 egg whites or 1 egg beaten
- 1 cup Italian seasoned bread crumbs
- 1 1/2 cups tomato sauce - heated
- 1 cup grated mozzarella cheese
Pierogi's

Pierogi Dough To prepare the pierogi dough, mix together the flour and salt
- 2 cups flour, plus extra for kneading and rolling dough
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream, plus extra to serve with the pierogi
- 1/4 cup butter, softened and cut into small pieces
- butter and onions for sauteing
- ingredients for filling of your choice (potato & cheese filling recipe below)
Seven Up Sheet Cake

A weight watcher's dessert
- Filling:
- 1 yellow (or lemon) cake mix (I used sugar free yellow)
- 20 oz. of diet Seven Up (1 16.9 oz bottle plus an addl 3 oz.)
- 1 lg. & 1 small can peaches - rinsed, drained & cut up
- 1 egg slightly beaten
- 1 tsp. vanilla
- 2 pkgs. cream cheese - room temperature
- 8-12 pkgs of Splenda
Avocado Chicken Salad

Cook chicken breast until done, let cool, and then shred
- 2 or 3 boneless, skinless chicken breasts
- 1 avocado
- 1/4 chopped onion
- juice of 1/2 a lime
- 2 Tbsp Cilantro
- salt and pepper to taste.
Salmon or Shrimp Patties

- 1 can Salmon - undrained
- 1/3 cup finely minced onions
- 1/4 tsp. black pepper
- 1/4 tsp. Cajun seasoning
- 1/4 tsp. Old Bay seasoning
- 1 Tbsp. chopped parsley
- 1/4 tsp. lemon zest
- 15 saltine crackers - finely crushed
- 1 large egg - well beaten
- 1/8 c. water
