- 3 cups graham cracker crumbs
- 3/4 cup granulated sugar
- 3/4 cup melted butter
- cheesecake:
- 4 8oz Cream Cheese (room temp)
- 4 extra large eggs (room temp)
- 1 3/4 cups granulated sugar divided
- 1 Tablespoons vanilla or almond
- 1/4 cup cornstarch
- 1/2 cup heavy cream
- 2 Tablespoons sour cream
- decorate:
- Blueberries fresh
- Strawberries, fresh
- Blackberries, fresh
- Raspberries, fresh
- Powdered Sugar
Creamy Chocolate Frosting

- 1/2 cup butter at room temperature
- 1/2 cup evaporated milk
- 4 1/2 cups powdered sugar
- 1/2 cup cocoa powder
- 1 1/2 tsp vanilla
Kneader's Peppermint Brownies

- brownies:
- 1 cup butter
- 4 oz unsweetened chocolate
- 2 cups sugar
- 1 teaspoons vanilla
- 4 eggs
- 1 cup all-purpose flour
- 2 cups semisweet chocolate chips
- filling:
- 1/2 cup softened butter, margarine, or shortening
- 2 cups confectioners’ sugar
- 2 drops mint flavoring or to taste
- 1 drop pink food coloring
- ganache:
- 1/2 cup semisweet chocolate chips
- 1/4 cup heavy cream
- crushed peppermint ( red and white)
Baked Potato Skins

- 3 tablespoons vegetable oil

Pork Tenderloin with Apple Puree

- 2 to 3 pork tenderloins, 3 pounds total weight, trimmed of excess fat and silver skin

- 1/2 teaspoon crushed red pepper
- 3 tablespoons canola oil
- 2 tablespoons soy sauce
- 2 tablespoons minced fresh ginger
- 1 tablespoon apple cider vinegar
- 1 tablespoon packed light brown sugar
- 2 teaspoons Dijon mustard
- 1/2 teaspoon ground allspice
- Salt and freshly ground black pepper
- 2 tablespoons butter
- 1/4 cup minced shallots
- 8 cups peeled, cored and diced Braeburn apples, about 6 apples
- 1 sprig fresh thyme
- 3/4 teaspoon kosher salt
- 1/2 teaspoon fresh ground white pepper
