Emerill's Lobster Rolls

Preheat the grill or broiler
- 4 hot dog buns
- 1/4 cup melted unsalted butter
- 1/3 cup homemade or good quality mayonnaise
- 1 tablespoon white truffle oil
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 cup finely chopped celery
- 2 tablespoons minced onions
- 2-1/2 T. minced fresh parsley
- 1 teaspoon chopped chives
- 2 lobster tails,brushed & broiled with 2 T. melted butter & 1/4 tsp. paprika (broil 5-10 min.)
- 1/2-3/4 lbs. shrimp (cooked in 2 T. butter --sprinkle w/cajun seasoning)
Chicken Tortellini Soup

Sweat onion, celery, garlic, carrot, and seasoning in 2 T
- 2 cups onion, diced
- 2 cups celery, sliced
- 1 cup carrot, sliced
- 1 T. garlic, minced
- 1 T. Italian seasoning
- 1/4 cup dry sherry
- 8 cups chicken broth
- 4 cups cooked chicken (1 lb), chopped
- 9 oz. Bertoli refrig. cheese-filled tortellini
Tangy Meatloaf Burgers

Preheat a grill to medium high
- 1 small onion (1/2 sliced into rings, 1/2 diced)
- 1 pound meatloaf mix (ground pork, beef and veal) or ground turkey
- 1/4 cup fresh parsley, chopped
- 1/2 cup breadcrumbs (preferably panko)
- 1 large egg
- 1 teaspoon sweet or smoked paprika
- 1/3 cup ketchup
- 1/3 cup duck sauce
- Kosher salt and freshly ground pepper
- 1 tablespoon extra-virgin olive oil
- 4 potato buns or other rolls, split
- Lettuce, sliced tomato and pickle slices, for topping
- Sweet potato chips, for serving (optional)

- 1/2 (16-oz.) package farfalle (bow-tie) pasta
- 1 pound fresh broccoli
- 1 cup mayonnaise
- 1/3 cup sugar
- 1/3 cup diced red onion
- 1/3 cup red wine vinegar
- 1 teaspoon salt
- 2 cups seedless red grapes, halved
- 8 cooked bacon slices, crumbled
Coconut Shrimp 1

In medium bowl, combine egg, 1/2 cup flour, beer and baking powder
- Sauce:
- 1 egg
- 1/2 cup all-purpose flour
- 2/3 cup beer
- 1 1/2 teaspoons baking powder
- 1/4 cup all-purpose flour
- 2 cups flaked coconut, unsweetened
- 24 shrimp
- 3 cups oil for frying
- 1/2 cup orange marmalade (or pineapple preserves)
- 2 tsp. dijon
- 1 tsp. horseradish
- dash salt
- honey to taste
Cabbage Roll Casserole

- 1 medium head of cabbage shredded
- 1 large onion chopped
- 1 medium bell pepper chopped
- 1 can rotel tomatoes
- 1-2 can(s) 8 oz. tomato sauce
- 1-1/2 lbs ground beef
- 5-6 c cooked rice
K's Crab Quiche Florentine

- 1/2 Pillsbury Pie Crust package
- 8 ounces lump crabmeat
- 1/2 cup onion, chopped
- 3/4 cup (3-ounces) shredded Swiss/Gruyere cheese (or whatever cheese you prefer)
- 4 cups fresh spinach, coarsely chopped
- 1/4 teaspoon dried tarragon
- 1/4 teaspoon Old Bay
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon pepper
- 1 cup reduced fat milk
- 1/2 cup egg substitute
Low Fat Zucchini Casserole

Preheat oven to 350°. Mix everything together in a bowl
- 4 cups grated zucchini
- 1 cup bisquick (using heart smart)
- 1 small onion, grated
- 3 egg whites, 1 whole egg
- 1/4 cup olive oil
- 1/4 cup grated parmesan cheese
- 1 tsp salt
- 1 tsp parsley
Hawaiian Chicken Kabobs

1.In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder
- 3 tablespoons soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons sherry
- 1 tablespoon sesame oil
- 1/4 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 8 skinless, boneless chicken breast halves - cut into 2 inch pieces
- 1 (20 ounce) can pineapple chunks, drained

K's Fantastic Gumbo

•In a Dutch oven mix oil and flour and stir well
- 1/4 cup all-purpose flour
- 1/4 cup canola oil
- 3 celery ribs, chopped
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 1 large carton (48 ounces), plus 1-1/2 cups chicken broth
- 1 14 oz. can diced tomatoes
- 1 box Tony Chachere's Gumbo Mix
- 3 garlic cloves, minced
- 1 teaspoon pepper
- 1 large bay leaf
- 2 pounds uncooked large Shrimp, peeled
- 8 oz. smoked sausage, diced
- 2 chicken thighs, cut up, browned in olive oil and sprinkled with Creole Seasoning
- 12 oz. frozen Cod, thawed and cut into pieces
- 8 oz. lump Crabmeat
- 1 package (16 ounces) frozen sliced okra, thawed
