Simple Summer Spaghetti

1. Bring large pot of salted water to boiling
- 12 oz. packaged dry spaghetti or spaghettini
- 1/4 cup extra-virgin olive oil
- 5 cloves garlic, coarsely chopped
- Pinch crushed red pepper, or more to taste
- 2 cups cut-up grilled zucchini and/or summer squash
- 2 cups red and/or yellow cherry tomatoes, quartered
- 1/4 cup fresh basil leaves, torn
- 1/4 to 1/2 cup grated Parmesan cheese
- 2 tbs chopped fresh basil or Italian parsley
Chunky Chicken-Barley Soup

Preparation 1. Sauté first 4 ingredients in hot oil in a large Dutch oven over medium-high heat 5 minutes
- 1 cup chopped onion
- 1 cup chopped carrot
- 1/2 cup chopped celery
- 2 garlic cloves, minced
- 2 teaspoons olive oil
- 2 (14 1/2-oz.) cans low-sodium, fat-free chicken broth
- 1 3/4 cups water
- 1/4 teaspoon salt
- 1/4 teaspoon dried thyme
- 1/4 teaspoon pepper
- 1 cup chopped cooked chicken
- 1/2 cup uncooked quick-cooking barley
Nutella Shortbread Sandwich Cookies

- 2 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 Tablespoons cocoa powder (unsweetened)
- 2 oz. red food coloring
- 1/2 cup unsalted butter, at room temperature
- 1 1/2 cups sugar
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup buttermilk, at room temperature
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- Chocolate Ganache
- 1/2 cup half and half
- 1 cups dark chocolate, chopped
- Mascarpone Whipped Frosting
- 8 ounce mascarpone cheese, at room temperature
- 4 ounces cream cheese, at room temperature
- 1/3 cup sugar
- 2 cups heavy whipping cream
- If you don’t have mascarpone, sub all cream cheese, so a total of 12 ounces.
