Combine all ingredients in a crock pot
- 1 can (16oz) kidney beans, rinsed & drained
- 1 can (15 1/4 oz) whole corn, drained
- 1 can (15 oz) black beans, rinsed & drained
- 1 can (14 1/2 oz) stewed, tomatoes
- 1 can (8 oz) tomato sauce
- 1 can (4 oz) chopped green chilies, drained
- 1 envelope taco seasoning
- 1/2 cup chopped onion
- Tortilla chips

Preparation 1. Combine first 4 ingredients; whisk in olive oil
- 1/2 cup chopped fresh cilantro
- 3 tablespoons fresh lime juice
- 1 teaspoon kosher salt

- 2 lbs medium sized white potatoes, peeled
- 8 tbs butter
- 6 oz hickory smoked ham, diced
- 1 cup heavy cream, heated

- 1/4 cup Parmesan cheese, grated
- 1 cup onion, minced
