Easy Beef Barley Soup

“This soup is really easy and takes very little time to put together
- 1/2 pound lean ground beef (90% lean)
- 2 large fresh mushrooms, sliced
- 1 celery rib, chopped
- 1 small onion, chopped
- 2 teaspoons all-purpose flour
- 3 cans (14-1/2 ounces each) reduced-sodium beef broth
- 2 medium carrots, sliced
- 1 large potato, peeled and cubed
- 1/2 teaspoon pepper
- 1/8 teaspoon salt
- 1/3 cup medium pearl barley
- 1 can (5 ounces) evaporated milk
- 2 tablespoons tomato paste

- 6 tablespoons unsalted butter, softened at room temperature

- 1/2 cup butter

- 2 tsp vanilla

- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 tbsp sugar

Chicken Curry in a Hurry

1. Cook the rice according to the package directions
- 1 cup white rice
- 1 1/2 tablespoons olive oil
- 1 small yellow onion, thinly sliced
- 2 tablespoons curry powder
- 1 cup plain yogurt
- 3/4 cup heavy cream
- 1/2 teaspoon kosher salt
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 14.5-ounce can diced tomatoes, drained (optional)
- Meat from 1 rotisserie chicken, sliced or shredded NOTE: Cut or shred into bite sized pieces. Leave out the skins.
- 1/4 cup fresh cilantro leaves, roughly chopped
