Garlic Parmesan Cream Sauce over Pasta

MY NOTES: Shrimp would be delicious in this recipe - might taste like Ruby Tuesday's Shrimp Pasta in Parmsan Cream
- 1 lb pasta
- 1 tablespoon extra virgin olive oil
- 3 tablespoons butter
- 1 tablespoon chopped garlic (or minced)
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons flour
- 1 cup milk
- 1 cup chicken broth
- 1-1 1/2 cup shredded fresh Parmesan cheese (grated will not work well, shredded works best!)
- Salt and pepper
- 5 scallions (green onions, diced with scissors)
Con Queso

Saute onion in the butter
- 1 small onion, diced
- 1 Tbsp butter or margarine
- 2 lbs. Velveeta cheese
- 8 oz. cream cheese
- 1 small can diced chiles
- Chopped or sliced jalapenos, to taste
- 1 14-oz. can diced tomatoes (w/ juice)
Pumpkin Ribbon Bread

- Filling:
- 2 pkgs. (3 oz. each) cream cheese, softened
- 1/3 cup sugar
- 1 Tblsp. flour
- 1 egg
- 2 tsp. grated orange peel

- Bread:
- 1 cup cooked pumpkin
- 1/2 cup vegetable oil
- 2 eggs
- 1-1/2 cups sugar
- 1/2 tsp. salt
- 1/2 tsp. cloves
- 1/2 tsp. cinnamon
- 1-2/3 cups flour
- 1 tsp. baking soda
- 1 cup chopped pecans
Blue-Ribbon Apple Pie

“Grandma won many blue ribbons at the state fair with this scrumptious pie
- 1 (15-ounce) package refrigerated piecrusts, at room temperature
- 1 large egg, separated
- 7 medium apples, peeled, cored and sliced
- 1 tablespoon lemon juice
- 3/4 cup granulated sugar
- 1/3 cup all-purpose flour
- 1 1/4 teaspoons ground cinnamon
- 3 tablespoons cold unsalted butter, cut into small pieces
- 1 tablespoon sour cream

- 1/2 cup chopped onion
- 1 cup Pace Picante Sauce
- 1/4 cup molasses
- 1 tablespoon spicy-brown mustard
- 1 (15 ounce) can pork and beans
- 1 (15 ounce) can black beans, rinsed and drained
Spinach and Bacon Quiche

- 6 large eggs, beaten
- 1 1/2 cups heavy cream
- Salt and pepper
- 2 cups chopped fresh baby spinach, packed
- 1 pound bacon, cooked and crumbled
- 1 1/2 cups shredded Swiss cheese

- 6 medium potatoes, peeled and quartered
- 12 extra-large unpeeled garlic cloves

- 1 teaspoon salt
- 1/4 cup honey

- 2 cups whipping cream
- 1 cup whole milk
- 2-2 1/2 teaspoons pure mint extract
- 4-5 oz (1 small package) Andes mints (or your favorite bittersweet or semi-sweet chocolate), chopped into uneven pieces
