Chocolate Guinness Cake

I baked this cake for a friend of ours for his birthday that was on the Monday that just passed
- FOR THE CAKE:
- 250 ml Guinness Beer
- 250 g unsalted butter
- 75 g cocoa
- 400 g caster sugar
- 142 ml sour cream
- 275 g plain flour
- 2 eggs
- 1 tbsp vanilla extract
- 2.5 tsp bicarbonate of soda

- FOR THE TOPPING:
- 300 g cream cheese
- 150 g icing sugar
- 125 ml double or whipping cream

- IN PLACE TO SELF-RISING FLOUR, YOU CAN USE:
- 3-4 eggs
- 1/3 cup water
- 1 About 1 cup hot red pepper sauce (recommended: Texas Pete or Louisiana Hot Sauce, Tabasco might be hotter)
- 2 cups self-rising flour
- 1 teaspoon pepper
- House seasoning, recipe follows
- 1 (1 to 2 1/2-pound) chicken, cut into pieces

Pepperoni Stromboli II

Basically a rolled-up and sliced pizza, stromboli is fantastic football-watching fare
- 1 lb ball pizza dough, at room temperature
- Flour, for rolling out dough
- 40 thin slices pepperoni (turkey pepperoni for a lighter stromboli, if desired)
- 1 1/2 cups freshly shredded low-moisture, part-skim mozzarella cheese
- 1 egg, preferably organic, beaten
- 2 Tbsp freshly grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/4 teaspoon Kosher salt
- Pizza sauce, for dipping
Best Spinach Artichoke Dip

Sauté onions in butter, adding ingredients while mixing and blending well after each addition
- 1 pkg. frozen spinach thawed
- 1 jar marinated artichokes, chopped
- 8 oz. Philly cream cheese
- 8 oz. sour cream
- 3/4 c. shredded Parmesan cheese
- 8 oz. shredded Monterey Jack cheese
- 1/2 onion finely chopped
- 1 stick butter
- 1/4 teaspoon red pepper flakes or to taste

- 1 cup brown sugar blended with 2 teaspoons cinnamon

- 1 tablespoon lemon juice
- 1 cup plus 1 tablespoon sugar, divided
- 2 tablespoons instant tapioca
- 2 unbaked refrigerated or frozen pie pastries
- 1 tablespoon butter or margarine
- 1 tablespoon milk
