Chocolate Baklava

I've been cooking for years, and baklava remains a favorite
- SYRUP:
- 1 package (16 ounces, 14-inch x 9-inch sheet size) frozen phyllo dough, thawed
- 1-1/4 cups butter, melted
- 1 pound finely chopped walnuts
- 1 package (12 ounces) miniature semisweet chocolate chips
- 3/4 cup sugar
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon grated lemon peel
- ........................................
- 3/4 cup orange juice
- 1/2 cup sugar
- 1/2 cup water
- 1/2 cup honey
- 2 tablespoons lemon juice
Teddi's Foolproof Fabulous Stroganoff

Melt butter in large stew pot - medium heat only
- 3 lbs trimmed & cubed round steak or white meat chicken (raw)
- 1 lb fresh mushrooms (cleaned and halved)
- 2-3 1/2 lb cubes of salted butter
- 2 packets dry onion soup mix
- 5 or more cups of burgundy wine (beef recipe requires more wine for tenderizing)
- 1 pint of sour cream
- 2-4 chopped green onions (for garnish)
- Coarse ground black pepper
- Broad egg noodles (1-2 large bags)
Cauliflower and Horseradish Gratin

This is my favorite cauliflower gratin dish - it uses generous amounts of horseradish
- 3 1/2 pounds cauliflower, trimmed, cut into florets (about 8 cups)
- 6 tablespoons unsalted butter (I used 4)
- 3 tablespoons all purpose flour
- 2 cups half and half
- 7 tablespoons prepared white horseradish
- 1 teaspoon white wine vinegar
- Ground nutmeg
- 1 cup packed grated Fontina cheese (about 4 ounces)
- 1/2 tablespoon Dijon mustard
- 2 cups fresh French breadcrumbs

- 2 packages (1/4 ounce each) active dry yeast
- 1/4 cup warm water (110° to 115°)
- 1 cup warm milk (110° to 115°)
- 2 eggs
- 1/2 cup granulated sugar
- 1/4 cup shortening
- 2 teaspoons salt
- 5-5 1/2 cups all-purpose flour

- 1 cup chopped pecans
- 1/2 cup red-hot candies

- 1 stick butter, softened
- 1 cup sugar
- 2 large eggs, separated and whites beaten until stiff
- 1 tablespoon orange zest
- 1 teaspoon orange
- 1 1/2 cups all purpose
- 1/2 teaspoon
- 1 1/2 teaspoons baking powder
- 1/2 cup orange juice

- VANILLA BUTTERCREAM:
- 1 cup butter, softened
- 1 teaspoon clear vanilla
- 4 cups sifted confectioners’ sugar
- 2-3 tablespoons milk (or whipping cream)
Nancy's Rocky Point Clam Chowder

This is the version that my mother used to make and the one that I like the best!
- 1 2" square piece of salt pork
- 1 medium onion. chopped
- 1 Tablespoon flour
- 4-5 cubed potatoes
- 1 bottle of clam juice
- Water
- 2 6-oz cans chopped (rather than minced) clams
- 1 can of condensed tomato tomato soup
- Salt and pepper, to taste
- 10 saltine crackers (optional)

- 1 boneless beef sirloin steak, 3/4-inch thick (about 1 pound), cut into thin strips

- Leave the skin on the chicken for added flavor and juiciness. Even if you don't like to eat it, you can always take it off after grilling.
