Easy Mac and Cheese

Fill a 3-qt saucepan about half full with water
- Water
- 2 cups uncooked elbow macaroni or small pasta shells
- 1 Tbsp. butter or margarine
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese or American cheese
- 1/2 tsp. salt
- 1/2 tsp. ground mustard (I had to talk her into putting mustard in!)
- 1/4 tsp. pepper
Chuck Roast Dinner

A tasty tomato sauce nicely coats this comforting combination of beef, potatoes and carrots
- 1 boneless beef chuck roast (3 pounds), cut into serving-size pieces
- 3 medium potatoes, peeled and cut into chunks
- 4 medium carrots, cut into chunks
- 2 cans (11-1/2 ounces each) tomato juice
- 1/4 cup Worcestershire sauce
- 3 tablespoons quick-cooking tapioca
Baking Powder Biscuits

Makes 6 large biscuits
- 1 cup sifted flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 1/2 Tablespoons shortening (and a SMIDGE more actually)
- 1/3 cup milk
Herbed Parmesan Dipping Oil

Combine seasonings and olive oil on a 6" plate
- 1/2 tsp Italian herb seasoning OR 1/4 tsp each dried oregano and basil
- 1/4 cup extra virgin olive oil
- 2 tsp grated Parmesan cheese
- Black pepper
- Italian bread, sliced or in pieces
Orange Buttercream Frosting (Small Batch)

- 1/4 cup butter, softened
- 2 cups confectioners' sugar
- 1 teaspoon grated orange peel
- 3/4 teaspoon vanilla extract
- 2 to 3 tablespoons orange juice

- 2 teaspoons baking soda

- 1 1/8 teaspoons ground cinnamon, divided

- 2 cups water
- 2/3 cup canola oil
- 2 tablespoons white vinegar
- 2 teaspoons vanilla extract
- 1 can (12 ounces) whipped vanilla frosting
Mexican Chicken Corn Chowder II

"This is my version of a most requested chowder here in Southern Indiana
- 2 1/2 cups frozen hash browns
- 1 cup corn ( frozen, or canned)
- 1 cup chicken breasts ( cut in 1/2-1-inch cubes)
- 1/2 cup green onions ( chopped)
- 1 small bell peppers ( chopped)
- 1 (4 ounce) cans diced green chilies
- 1 (2 ounce) cans pimientos
- 1 (12 ounce) cans evaporated milk
- 1 1/2 cups whole milk
- Salt and pepper
- 1 cup sharp cheddar cheese ( shredded)
Pan-Seared Strip Steak

A little butter adds richness and keeps leaner-than-usual beef moist without adding much total fat
- 2 (12-ounce) New York strip steaks
- 1 teaspoon kosher salt
- 3/4 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 thyme sprigs
- 2 garlic cloves, crushed
Fried Fish

Heat oil to 375°. Cut the fish into wedges
- 3 cups vegetable oil, soybean or Canola
- 2 pounds fresh fish fillets (cod, haddock, or other firm white fish)
- 1 1/3 cups self-rising flour
- 1 cup water
- 1 egg
- 2 teaspoons granulated sugar
- 2 teaspoons salt
Crock Pot Beer Chicken

Place all ingredients in the crock pot, and cook on high for 4-5 hours, or low for 6-8 hours
- 2 lbs skinless, boneless chicken breasts
- 1 bottle or can of your favorite beer
- 1 tsp salt
- 1 tsp garlic powder
- 1 TB dried oregano
- 1/2 tsp black pepper
