The wonderful flavors of a classic Reuben sandwich in a handy, portable casserole
- 16 oz. sauerkraut, rinsed and drained well
- 1/2 -1 tsp. whole caraway seed
- 12 oz. corned beef, shredded or cubed
- 2 Cups shredded Swiss cheese
- 1/2 Cup light mayonnaise
- 1/2 Cup 1000 Island dressing
- 2 slices homemade rye bread, dried and made into bread crumbs (about 1 1/2 cup crumbs)
- 3 TB. butter, melted

- 1 cup canola, corn, or vegetable oil; more for the pans
- 2 cups (9 oz.) unbleached all-purpose flour; more for the pans

- 3/4 teaspoon ground nutmeg
- 3/4 teaspoon ground ginger
