Black Bean Tostadas

Prep Time: 5 minutes Cooking Time: 10 minutes Yields: 2 servings
- 1 tablespoon olive oil
- 1 clove minced garlic
- 1 can Eden Organic “No Salt Added” Black Beans
- 1 small yellow squash, chopped
- 1 small zucchini, chopped
- 2 whole grain tortillas
- 1 small avocado
- Sea salt and black pepper to taste
- Low sodium salsa

- Dressing:
- 1 can black eyed peas
- 1 can black Beans
- 3/4 c sweet corn
- 3 green onion
- 1/2 c Green bell pepper
- 2 or 3 Tomatoes
- 2/3 Avocado
- 1 Can diced jalapenos
- 1/3 Bunch chopped cilantro
- 1 T Olive Oil
- 1 T White Wine vinegar
- 1/2 Lime Juice
- 1/2 tsp Dijon Mustard
- Salt and Pepper to taste
Marshmallow Cream Cheese Fruit Dip

Mix all together
- 8 oz. cream cheese (softened)
- 1 jar (around 8 oz.) marshmallow cream
- 1/4 cup chocolate syrup or 1 T. lemon juice
- 1 t. vanilla
Strawberry Nut Salad

Dissolve gelatin in boiling water
- 1 lg pkg strawberry gelatin
- 1 c boiling water
- 2 10oz pkgs frozen sliced strawberries (thawed)
- 1 lbs can crushed pineapple drained
- 3 med bananas, mashed
- 1 c chopped nuts
- 1 c sour cream
Flake Steak Terijaki

Combine all, except meat, marinate in meal for 4 hours turn occasionally
- 3/4 C Vegetable Oil
- 1/4 C each Soy Sauce Honey
- 2 T each vineagar finely chopped green onions
- 1 lge garlic minced
- 1 1/2 tsp ginger
- 1 flank steak (1 1/2 lbs scorred)

Mix all ingredients together and bake at 350 for 30 minutes
- 8 oz cream cheese, soften
- 4 oz Monterrey Jack Cheese
- 2 oz Parmesan cheese
- Small can artichoke hearts-drained and chopped
- 1 10oz Rotel
- 1 10oz pkg chopped spinach defrosted
- 1/2 small onion, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder

- 1 cup really raw cashews, soaked 6+ hours
- 1 tsp vanilla powder
- 4 tbls coconut oil, melted to liquid
- 3-6 tbls water (as needed)
